Ingredients  

  • pounds sirloin steak or strip loin or ribeye
  • salt and black pepper or steak spice, to taste
  • 1 teaspoon chopped fresh rosemary or ½ teaspoon dried rosemary
  • 1 tablespoon vegetable oil or as needed
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 tablespoon chopped fresh parsley

Instructions 

  • Cut steak into bite-sized pieces. Toss with salt, pepper, and fresh rosemary.
  • Preheat a large skillet over medium-high heat. Add vegetable oil.
  • Add steak in a single layer and cook 2 to 3 minutes without stirring to get a crust on one side. Stir and cook 1 minute more. Do not overcook.
  • Remove from heat and place on a plate. Reduce heat to medium.
  • Add butter and garlic, cook 1 minute until fragrant. Add steak and parsley. Toss to combine.
  • Remove from the pan immediately, season with salt if desired and serve warm.

Notes

  • Dab raw steak bites dry with a paper towel so that steak sears in the pan well.
  • Cook steak bites in batches if needed. If the pan is overcrowded, you won’t get a good crust.
  • Vegetable oil is used in place of olive oil as it has a higher smoke point.

    1. Hi Diane, I have never tried air frying this recipe but I would try cooking them at 400°F for 5–7 minutes, shaking the basket halfway through. I would love to hear how that turns out for you!

      1. Well I didn’t cook them in the air fryer but I did cook them and cooked the creamy mushroom sauce, delicious this will be a recipe I use all the time. The seasonings perfect and the steak was so tender. I personally think cooking them in the air fryer would take away from the flavors.Thank you for sharing

  2. these are amazing! I made and served with horseradish creme and will make again. One tip from similar dishes I have made – cook the steak whole, let rest 5-10 minutes and then cut into cubes and toss with the pan butter. It’s juicer that way.5 stars

  3. Loved this!!! I added mushrooms and red onions. When I was melting the butter and garlic is when I added them, let them sauté then added my meat back to skillets ( I used two to cook all at once instead of in batches). I had made rice so we just mixed both skillets and rice together and served that way and had Naan with garlic. Was spectacular!!!! I took a picture but cannot figure out how to add it.5 stars

These steak bites are delicious and oh so easy to make.so I would give 5 stars for taste 5 stars for prep and 5 stars for clean up.i made these for super bowl party it was only 3 of us here. social distance and all.it would get expensive to make for a crowd.this will be added to my dinner menu also.we are doing low carb so this with roasted Brussels sprouts with yellow squash and zucchini add a side of carrots yum.5 stars

  7. I only had one batch of meat to cook (cooking for two, didn’t want leftovers) and I added quartered button mushrooms to the pan, when the steak was almost done. I probably should have removed the meat and sautéed the mushrooms separately, but I was in a hurry. Steak was slightly overdone, but the sauce was great, and enhanced the mushrooms as well. I served it with a side of asparagus with some of the sauce on that as well. A very satisfying, low carb dinner. I will be making it again.4 stars
