What is a Denver Omelet?

A Denver omelet and a Western omelet are essentially the same thing; an omelet filled with ham, bell peppers, onions, and cheese.

  • Why Make It: Cooking the filling first adds flavor and keeps the eggs from becoming watery.

  • Eggs: This recipe uses 3 large eggs for 1 omelet. If you want a slightly smaller omelet, use 2 eggs instead (or just egg whites if you’re watching calories)!
  • Milk: A splash of milk helps create a softer, more tender omelet, though you can substitute half-and-half for extra richness or skip it altogether for a firmer texture.
  • Filling: Diced ham, onion, red and green bell peppers are all added but the sky is the limit! Try adding mushrooms, bacon, tomatoes, or even spinach if you have some on hand!
  • Cheddar Cheese: Sharp cheddar adds bold, savory flavor, and shredding it from a block helps it melt more smoothly. You can also use Monterey Jack, Swiss, pepper Jack, provolone, or a cheddar blend for a delicious variation.

How to Make a Denver Omelet

  1. Beat the eggs with milk and seasonings.
  2. Sauté the onion, then cook the ham and peppers.
  3. Reduce the heat and pour the eggs into the skillet.
  4. Add the cheese, cover, and cook (full recipe below).
  5. Fold the omelet in half and serve immediately.

Tips for Omelet Success

  • Dice into Similar-Sized Pieces: Dice the ham and vegetables into small, similar-size pieces so they cook quickly and do not tear the eggs. I love using this veggie chopper to make quick work of this!
  • Cook the Vegetables First: Cook them before adding the eggs. Raw peppers and onions can release moisture and leave the omelet watery.
  • Use Medium-Low Heat: Keep the skillet at medium-low after adding the eggs. High heat can brown the bottom before the center sets.
  • Use the Correct Pan: Use a nonstick skillet and one that is close to 6 inches wide. A much larger pan will produce an omelet that is thin and harder to fold.
  • Cover: Cover the skillet after adding the cheese. The trapped heat finishes the top and melts the cheese without flipping.
  • Don’t Overfill: Avoid overfilling the omelet. Extra filling can be spooned over the top or served alongside it.

Store, Reheat, Repeat

Fridge: Store leftover omelet in an airtight container for up to 3 days.

Reheat: Warm in the microwave or in a covered skillet over low heat. Avoid overheating.

Make Ahead: Cook the filling up to 2 days ahead and store it separately. Reheat before adding to a freshly cooked omelet.

Freezing: Freezing is not recommended.

Ingredients  

  • 3 large eggs
  • 1 tablespoon milk
  • salt and black pepper to taste
  • 1 tablespoon butter
  • 2 tablespoons finely diced white onion
  • 1 ounce ham diced
  • 2 tablespoons diced green bell pepper
  • 2 tablespoons diced red bell pepper
  • ½ cup shredded cheddar cheese

Instructions 

  • Beat eggs, milk and salt & pepper with a fork. Set aside.
  • Melt butter in a 6” skillet over medium heat. Add onion and cook until slightly softened about 3 minutes.
  • Add ham and peppers. Cook an additional 3-5 minute or until peppers are tender.
  • Turn heat to medium-low and add egg mixture. Allow to cook about 2 minutes.
  • Run the spatula along the edges of the egg mixture while lifting the pan to allow raw egg to run underneath the cooked eggs.
  • Once the eggs are almost set, add cheese and cover. Cook until top is set and cheese is melted, about 5-6 minutes.
  • Fold in half and serve.

Notes

Keep leftovers in an airtight container in the refrigerator for up to 3 days.

    1. Yes, for a 3-egg omelet a 6-inch skillet is big enough. If you’d prefer a thinner omelet, you can use a larger pan.

  2. This is such a good omelet and the method is outlined perfectly. Only thing the outside of my omelet is too brown so watch how high you set your temperature. Still was amazing! Thank you!!

  3. For the sake of novice cooks, I don’t find where the recipe adds the veggies to the omelet. Since I’ve been cooking for around 60 years and have made many omelets, it wasn’t a problem for me, but just in case…5 stars

  4. Easy n nutritious, green red yellow pepps n onion, maybe mushrooms olives but i like bacon crumbles, sausage n ham too, I’ve done filet mignon slices too n reg American cheese melt over it all, 3 toasts n coffee makes 1st class breakfast imo
