There is nothing like Chicken Rice Casserole for dinner. This dish is deliciously easy, creamy and totally satisfying and you’ll never believe it needs just 4 ingredients!

This is a special dish because the recipe comes from my BFF, Penny and she’s been making this for years. It’s her go-to, must have, favorite easy weeknight meal that I just had to try.

I have to admit, when I first made it I knew it would be tasty but… I had NO idea what I was in for and it’d definitely become a regular in our rotation!

This easy dish comes together in under 5 minutes, it’s one of the quickest dinner preps on my whole site (along with One Pot Pizza Tortellini Bake).

This dish is belly warming and comforting while being simple and easy to make, it’s like serving a nice warm hug from your Mom!

The chicken comes out incredibly tender and juicy, the rice is perfectly cooked in a rich and creamy sauce and the whole thing is loaded with flavor!

This easy Chicken Rice Casserole takes about an hour to bake (depending on your oven, you may need a few extra minutes but for me it’s about an hour), but that is one of the things that make it kind of the perfect dish.

We’ve made this just as written over and over but I’ve also added a little bit of onion to the bottom of the pan or a couple of handfuls of fresh mushrooms.
With very little minimal prep time, you can slide this casserole into the oven and relax, or maybe help with homework without feeling the usual dinner time rush!

5 minutes of work, and then perhaps a glass of wine or read your book for an hour?  I feel like that’s a good idea for ALL weeknights!

I use homemade onion soup mix in this recipe, but you can use the kind in the envelope if you haven’t had a chance to mix up a batch yet. The flavor will be amazing either way!

My friend Penny also said she sometimes replaces the onion soup mix with a packet of gravy mix depending on what she has on hand!

If you are lucky enough to have leftovers, this makes for a delicious lunch the following day.

Ingredients  

  • 4 boneless skinless chicken breasts
  • 1 cup long grain white rice uncooked
  • 1 ½ cups water
  • 1 ounce dry onion soup mix 1 packet or use homemade
  • 10.5 ounces condensed cream of mushroom soup 1 can

Instructions 

  • Preheat oven to 325°F.
  • Spray a 9×13-inch casserole dish or glass baking pan with cooking spray (the rice doesn't cook well in a metal pan). Add chicken breasts and season with salt & pepper.
  • Pour uncooked rice over chicken. Sprinkle with onion soup mix.
  • Combine mushrooms soup and 1 ½ cups of water. Pour over chicken.
  • Cover and bake 1 hour 15 minutes or until rice is tender.

Notes

My casserole is always ready in 1hr 15 minutes however depending on your own variables, it can require up to an additional 25 minutes.

  2. This was so easy and delicious! I had to make a few substations .
    6 boneless skinless thighs.
    2 cups of rice.
    Sprinkled the chicken with a little Adobo.
    Put the rice around the rice chicken.
    Mixed 2 cups of chicken broth, 1 can of cream of chicken and the onion soup mix.
    Baked covered with foil like you said. Then Sprinkled shredded cheddar on top and broiled it until the cheese was chrispy . Huge hit with the family!5 stars

      Did you make any additions to the recipe? As it only has 4 ingredients and only two make the sauce, it tastes pretty much how those two ingredients taste.

      That being said, based on reviews, I think that people who do know how to cook as well as newbies in the kitchen equally enjoy an easy casserole recipe!

  5. Just made this and it was amazing, even after multiple flubs on my part! I *thought* I had thawed chicken breasts in the fridge. I was wrong. So I pulled chicken breasts out of the freezer. Turns out they were the thinly sliced version….I was worried they would cook too quickly and be shoe leather by the time the rice was done – so I ran hot water over them for a about a minute then threw them in the pan frozen! I was afraid the frozen breasts would make it too watery so instead of 1.5 cups of water I added 1 c water, .5 c chicken bone broth. After 1 hour 15 minute cook time, temp was adequate but it seemed slightly soupy in a couple spots – so I spooned the rice/sauce mixture around to even it out, sprinkled crushed Pepperidge Farms herbed stuffing mix on top and baked it uncovered for another 8 mins. Perfection. Will definitely try this recipe again – and I’m not sure I’d do it any differently!

  6. I’ve made this once before and it turned out great! My hubby and baby both ate it up. I’m making this again tonight and just wondering if anyone has tried adding cheese to this towards the end of cooking??? Cheese makes everything better, right? 5 stars

  7. It was my first time making this and it was actually really good! My husband hates mushrooms and still enjoyed it(unless he’s lying lol) only recommendation is to not pour rice on top of the chicken…some of mine didn’t cook all the way.’otherwise will definitely try again!4 stars

  8. Love this dish!! I just made it for the third time…delicious!! I prefer using golden mushroom soup though. I spray the pan, lay chicken pieces down (used 2 leg quarter pieces bone in), season, pour rice around pan not on chicken. I used 1 1/2 boil in bag whole grain rice uncooked. Mixed 2 cups water with soup, poured over rice the most and some over chicken. Added a little more seasoning over chicken, but didn’t use onion soup mix just regular seasonings. Cut up 3 fresh carrots & half an onion, scattered around dish and in mixture. Cover with foil, cooked as instructed 325° for 1 hr 15 minutes. Perfectly seasoned & cooked through.5 stars

  9. I made this tonight I added mushrooms and baked at 360 for 1 hour and a bit Every thing was cooked and delicious

  10. Followed directions to a tee, pretty skilled in the kitchen and after 1 hour and 15 minutes rice is still hard. Luckily I was smart enough to remove the temperature ready chicken before putting the dish with just soup and rice back into the oven. Super disappointed, but thanks for sharing the recipe.1 star

  11. I just took this out of the oven after 1 hour and 15 minutes and it’s extremely watery and the rice isn’t cooked at all. I used wild rice instead of long grain and threw in fresh green beans, not sure that would make a difference though.

  13. This is a great recipe! I add some fresh mushrooms and a splash of Marsala wine to give some additional flavor. Also sprinkle with grated Parmesan cheese at the end and put under broiler for a few minutes. So good!

  14. Made this tonight and was disappointed. Used basmati rice and everything else as directed but mixed everything before dumping over chicken. Rice was not even close to done after 1:15 min and pan looked just like when I put it in…soup. Chicken was still immersed in soup mixture so that was done and only edible aspect of dish. This is one I’d have to mess up two more times to get it right.
