Holly’s Recipe Highlights: Crockpot Chicken Spaghetti

- Flavor: Creamy, cheesy, and savory with a hint of spice from the tomatoes and chilies, with plenty of Italian-inspired flavor.
- Why Make It: The slow cooker cooks the chicken until tender while building a flavorful, creamy sauce, and cooking the pasta separately keeps it perfectly al dente.
- Skill Level: This recipe is easy enough for a weeknight, with simple prep and no complicated sauce-making.
Total Time: 3 Hrs 5 Mins (5 Min Prep) Servings: 4 Cooking Method: Slow Cooker
Ingredient Notes

- Chicken Breasts: Boneless, skinless chicken breasts cook until tender enough to shred, while boneless, skinless thighs also work and add a slightly richer flavor.
- Bell Pepper: Red bell pepper adds a touch of sweetness, while green pepper has a more savory bite. Or replace with frozen diced peppers for an easy shortcut.
- Diced Tomatoes With Chilies: Drain the tomatoes well to keep the sauce from becoming too thin, and choose mild or hot varieties depending on how much heat you prefer.
- Italian Seasoning: Use your favorite store-bought or homemade Italian seasoning.
- Spaghetti: Cook the spaghetti just until al dente since it will soften slightly when stirred into the hot sauce. Replace with another medium or long pasta shape.
- Cheddar Cheese: Sharp cheddar adds the most flavor. Use freshly shredded cheese from a block for a smoother sauce, or replace with pre-shredded cheese.

I really liked this dish, easy and delicious!
Thanks!
Joann, I am happy to hear that you enjoyed the recipe.
Can I use a different cheese besides cheddar?? Substitute evaporated milk for regular milk?
thanks
Yes, any cheese will work. I haven’t tried it with regular milk, regular milk can sometimes separate or curdle in the slow cooker so I can’t say for sure how that would work.
I’d like to make this tomorrow. I’m into freezing single portions. Should I cook the pasta to not quite dente before freezing?
I would suggest cooking it to al dente before freezing.
Holly- this is so delish!! I did make it with sausage and yum!!! Thanks for the great recipe.
I am so glad you enjoyed this recipe Patti!
Made this recipe and is and it was perfect! Will definitely make again.
VJ, I am glad to hear that you enjoyed the spaghetti.
Pasta was tasty but I took off one star because I wouldn’t consider this easy because there are multiple things that need to be added during the cooking process so you have to read the recipe closely and set timers. I doubled the recipe and it fit fine in my 6 quart crockpot. Be sure to factor in increased cooking times once you get to the sauce stages if you double the recipe.
Thanks for trying our recipe, Diane!
We didn’t have chicken but I used sausages … after cooking in the sauce I cut into bite sized pieces… used red bell peppers and mushrooms and shallots but put those in towards end so not mushy. Used half and half milk and it turned out very tasty. Worth making. Thanks
Jeanie, replacing the chicken with sausage sounds delicious. I am glad you enjoyed it.
Ohhh! I’m making this right now, but will definitely try with sausage at some point! That sounds so good!!
