This creamy cucumber dressing is a fresh and easy favorite for salads or dipping vegetables.
Ingredient Tips for Cucumber Dressing
- Cucumbers: Use English or baby cucumbers as they have small seeds and thin skins so they don’t require peeling.
- Cottage Cheese: Use a high-fat cottage cheese to make it smooth and creamy. Cottage cheese can be replaced with ¼ cups each of Greek yogurt and mayonnaise.
- Greek yogurt: Use any variety of plain Greek yogurt.
If you don’t have a blender, this can be made with an immersion blender or in a food processor.
