Ingredient Tips for Cucumber Dressing

  • Cucumbers: Use English or baby cucumbers as they have small seeds and thin skins so they don’t require peeling.
  • Cottage Cheese: Use a high-fat cottage cheese to make it smooth and creamy. Cottage cheese can be replaced with ¼ cups each of Greek yogurt and mayonnaise.
  • Greek yogurt: Use any variety of plain Greek yogurt.

If you don’t have a blender, this can be made with an immersion blender or in a food processor.

Creamy Cucumber Dressing

A fresh creamy dressing perfect for salads or dipping.

Ingredients  

  • ½ cup cottage cheese
  • ½ cup mayonnaise
  • ½ cup plain Greek yogurt
  • English cucumber chopped
  • 2 to 3 tablespoons dill pickle juice from a jar of pickles
  • 1 teaspoon dried parsley or 1 tablespoon fresh
  • 1 teaspoon dried dill or 2 teaspoons fresh
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Kosher salt or to taste

Instructions 

  • In a small blender, combine cottage cheese, mayonnaise, Greek yogurt, cucumber, pickle juice, parsley, dill, garlic powder, onion powder, and salt.
  • Blend until smooth.
  • Taste and season with additional salt and pepper if desired.
  • Refrigerate at least 30 minutes before serving.
