  1. Weekly meal plans like this have been a real lifesaver in my kitchen — having the whole week mapped out takes so much stress out of weeknight cooking. I love that the fall plans lean into seasonal comfort food; it makes the cooler evenings something to look forward to. One tip that has worked well for me: I prep the grains and chop all the vegetables on Sunday, so putting dinners together during the week only takes a few minutes.

  2. I am a widower in my seventies, living on my own in north east England. My wife died seven years ago and three years ago I had my large bowel removed, so now have an ileostomy. I have adapted to eating most things, but some still cause problems, such as beetroot, which went straight through me.

Do you have a suitable meal plan for one old man? I quite enjoy cooking but have not had to learn to plan my own meals until recently.

    1. Hi Ken, thank you for reaching out and sharing your story! While my weekly meal plans are typically designed for families or multi-portion dinners, many of the recipes can be easily scaled down, or the leftovers portioned and frozen for quick solo meals. When you click print, you can change the serving size, which will change the amounts of the ingredients.

Since dietary needs can be very individual, I recommend checking with your healthcare provider or a registered dietitian for specific dietary guidelines, but I hope you find plenty of comforting, easily adaptable ideas here to enjoy cooking for yourself!
