Pork tenderloin is perfectly cooked with a sticky honey mustard glaze and served with sweet potatoes and apples.

Ingredients
Pork: Ensure you’re using pork tenderloin, not pork loin, in this recipe. Pork tenderloin should be approximately 1lb and about 2-inches in diameter.
Apples: I prefer firm, tart apples such as Gala or Granny Smith in this recipe. Peel the skin for the best texture.
Holly’s Pro Tips
- Trim the silverskin and any bits of fat from the pork.
- The honey Dijon glaze is quick to make—you can double up on it if you’d like because it’s delicious.
- Use a meat thermometer and cook to 140°F; the temperature will continue to rise as it rests. Be sure not to overcook.
- Let the pork rest for 5 minutes after cooking to allow juices to redistribute.
Variations
- Vegetables: Swap out sweet potatoes and apples for other root vegetables like carrots or parsnips.
- Glaze: Maple syrup or brown sugar can be used instead of honey.
Air Fryer Glazed Pork Tenderloin with Sweet Potatoes

Ingredients
- 1 pound sweet potatoes peeled and cut into ¾-inch pieces
- 3 medium Gala apples peeled, seeded, and cut into ¾-inch pieces
- 2 tablespoons vegetable oil divided
- 1 tablespoon brown sugar
- 1 teaspoon salt divided
- ½ teaspoon black pepper divided
- ½ teaspoon cinnamon
- 1 ¼ pound pork tenderloin
For the Glaze
- 4 cloves garlic minced
- ½ cup honey
- 3 tablespoons Dijon mustard
- 1 tablespoon yellow mustard
- 1 tablespoon fresh lemon juice
- ½ teaspoon dried thyme leaves
Instructions
- Preheat the air fryer to 400°F (204°C).
- To make the sweet potatoes, in a medium bowl, combine the sweet potatoes, apples, 1 tablespoon oil, brown sugar, ½ teaspoon salt, ¼ teaspoon pepper, and cinnamon. Toss to coat.
- Place the sweet potato mixture in the air fryer basket and cook for 16 to 19 minutes or until tender, shaking the basket after 10 minutes. Remove from the air fryer, cover, and set aside.
- To make the sauce, in a small skillet, add the garlic and 1 tablespoon oil and cook just until fragrant over medium-high heat. Whisk in honey, Dijon mustard, prepared mustard, lemon juice, and thyme and bring to a boil; let boil, whisking occasionally, for 4 minutes or until thickened. Set aside half of the glaze for serving.
- To make the pork, remove any silverskin from the pork and dab dry with a paper towel. Season the pork with the remaining ½ teaspoon salt and ¼ teaspoon pepper.
- Line your air fryer basket with parchment paper. Add the pork and brush all sides using half of the glaze.
- Cook the pork for 16 to 18 minutes or until pork reaches 145°F (63°C). Remove the pork and parchment paper from the air fryer and set aside to rest for 5 minutes before serving.
- While the pork is resting, add the sweet potatoes and apples back to the air fryer and heat for 2 to 3 minutes.
