Chicken Burrito Bowl

Tender seasoned chicken, rice, beans and veggies make an easy complete meal!


  • 1 pound chicken breast boneless, skinless, 1/2 inch diced
  • 1 packet taco seasoning
  • 1 Tablespoon olive oil
  • 1 lime juiced
  • 4 cups white rice cooked
  • 1/4 cup cilantro minced
  • 15 ounces black beans drained and rinsed
  • 1 cup salsa
  • 1/2 cup sour cream
  • 1 avocado peeled, pitted and diced
  • 1 cup Monterey jack cheese shredded
  • 4 cups lettuce chopped


  • Combine diced chicken breast and taco seasoning and toss to coat the chicken.
  • Heat olive oil over medium-high heat in a 12-inch skillet. Add the chicken and cook until no pink remains. Sprinkle with lime juice, stir, and remove from heat.
  • Combine cooked rice and cilantro in a bowl and stir to combine.
  • To serve, fill 4 bowls with equal amounts of lettuce, rice, black beans, chicken, salsa, sour cream, avocado, and cheese.

Recipe Notes

Notes: I prefer a salsa that is more sauce like so it creates a 'dressing' when combined with the sour cream.
