  • 1 small zucchini sliced 1/2" thick
  • 1 red onion cut into wedges
  • 1 bell pepper cubed
  • 8 oz mushrooms halved
  • 1 cup grape tomatoes
  • 2 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1 clove garlic minced
  • 1 tablespoon fresh rosemary chopped
  • salt & pepper to taste

  1. Place all ingredients in a large bowl and toss to combine. Allow to marinate at least 30 minutes or up to 8 hours.
  2. Preheat grill to medium heat.
  3. Remove vegetables from marinade and place in a grilling basket or on a grill mat (or thread onto skewers).
  4. Grill 8-12 minutes or until cooked to desired doneness.
  5. Serve immediately.
