  • 2 lbs sweet potatoes peeled
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

  1. Preheat oven to 400°F.
  2. Cut potatoes into 1" cubes and toss with olive oil and seasonings.
  3. Roast on a baking sheet for 35-40 minutes or until tender, stirring after the first 20 minutes.

  4. Serve hot with sour cream or cool and add to salad
