  • 2 cups flour
  • 1/8 teaspoon salt or to taste
  • 2 eggs
  • 1/3 cup milk
  • 1 tablespoon butter softened
  • 1/4 cup flour for dusting

  1. In a large bowl, stir flour together with salt. Set aside.

  2. Whisk together eggs in a small bowl. Add eggs, milk and butter to flour mixture. Stir with a fork at first and then mix well with your hands.

  3. Knead dough on a floured surface adding more flour a little bit at a time if it's sticky.  Continue kneading about 5 minutes or until smooth. Wrap in plastic wrap and rest for 20 minutes.

  4. On a lightly floured surface, roll dough to 1/4 (or 1/8 inch) inch thickness. Cut into strips and dust with flour.

  5. To prepare, add noodles to a large pot of boiling, salted water and cook about 3 minutes.  Serve with butter or your favorite pasta sauce.
