Simple zucchini roasted in the oven is the perfect side for any meal. Adding a caprese salad is not only easy, it’s deliciously fresh!

Ingredients

EASY ROASTED ZUCCHINI
  • 1 large zucchini cut in half lengthwise and sliced
  • 1 large red pepper
  • 3 cloves garlic mince
  • 3 tbs olive oil
  • 1 tbs balsamic vinegar
  • salt and pepper to taste
  • ½ tsp Italian seasoning or to taste
  • 1/3 cup fresh Parmesan cheese
CAPRESE SALAD
  • 3 cups grape tomatoes halved
  • ¾ cup mini bocconcini or fresh mozzarella chopped
  • 2 tablespoons olive oil
  • ¼ cup fresh basil gently torn
  • sea salt & pepper

Instructions

EASY ROASTED ZUCCHINI
  • Preheat oven to 4o0 degrees.
  • Lightly grease a 9×13 inch baking dish.
  • Combine all ingredients except cheese.
  • Place in preheated oven. Roast until vegetables are tender and slightly golden, about 18 minutes. Remove from oven; sprinkle with the Parmesan cheese, place back in the oven 2-3 min.
CAPRESE SALAD
  • Toss all ingredients in a small bowl.
  • Sprinkle with basil.
