Reuben Casserole

Ingredients

  • 12 oz dry rotini
  • 4 cups cabbage thinly sliced
  • 1 cup sauerkraut squeezed and chopped
  • 8 oz diced corned beef about 2 cups
  • 1 tablespoon butter
  • 1 small onion about 1 cup
SAUCE
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 1/4 cup milk
  • 1 1/2 cup low sodium chicken broth
  • 1 1/2 tablespoons dijon mustard
  • 3/4 teaspoons Worcestershire
  • 3/4 teaspoons pepper
  • 2 cups swiss cheese
TOPPING
  • 1/4 cup Panko Crumbs
  • 1 tablespoon butter melted
  • 1 tablespoon parmesan cheese
  • 1/2 teaspoon parsley

Instructions

  1. Preheat oven to 375 degrees F.
  2. Cook rotini according to package directions (about 9 minutes). Add the cabbage during the last 5 minutes of cook time. Drain and set aside.
  3. Heat butter in a pan over medium heat. Add corned beef and onion and cook until onion is tender, about 5 minutes. Set aside.
SAUCE
  1. Melt butter in a saucepan. Whisk in flour, salt and pepper and cook about 2 minutes. Gradually add chicken broth and milk a little bit at a time while whisking.
  2. Add dijon and Worcestershire sauce. Continue whisking over medium heat until thickened and bubbly.
  3. Remove from heat and stir in the swiss cheese until melted.
ASSEMBLY
  1. In a large bowl, combine the pasta/cabbage mixture, sauerkraut and the corned beef and onion. Add the sauce and mix well.
  2. Spread into a greased 9×13 baking dish. Combine all topping ingredients and sprinkle over pasta.
  3. Bake uncovered for 18-22 minutes or until hot and bubbly.
