A deliciously flavorful chicken salad with grapes, pineapple and nuts comes together quickly to create a wonderfully light meal that everyone will love!

Ingredients

  • 3 cups diced chicken
  • 1 cup pineapple tidbits drained, juice reserved for dressing
  • 1 cup red grapes halved
  • 1 red bell pepper diced
  • 1 cup celery sliced
  • 3/4 cup chopped pecans
Dressing
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 teaspoon curry powder
  • 3 tablespoons pineapple juice from the tidbits
  • 1 1/2 teaspoons dijon mustard
  • salt & pepper to taste

Instructions

  1. Combine all dressing ingredients in a small bowl. Set aside.
  2. Add remaining ingredients to a large bowl. Top with prepared dressing and gently toss to combine.
  3. Serve over croissants or lettuce.
