  • 2 avocados cubed
  • 2 tablespoons fresh lemon juice from 1/2 lemon
  • 1 English cucumber washed and diced
  • 2 tablespoons diced red onion
  • 1/4 cup fresh dill
  • 1 tablespoon sugar
  • 1 1/2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • seasoning salt & pepper to taste

  1. Gently mix together avocado and lemon juice in a medium bowl.
  2. Add all remaining ingredients and gently toss to combine.
  3. Refrigerate 20 minutes before serving.
