  • 1 large or 2 small mangoes diced
  • 1 red pepper diced
  • 1/4 cup red onion minced
  • 1 jalapeño seeded & minced
  • 1/2 lime juiced
  • 3 tablespoons chopped cilantro
  • 1/2 tablespoon olive oil
  • 1/2 tsp cumin
  • salt to taste
