Ingredients

Salad
  • 1 red onion diced
  • 1/4 cup pitted Kalamata olives (or black olives)
  • 1 green pepper chopped
  • 4 tomatoes chopped
  • 1 long English cucumber chopped
  • 1 cup feta cheese crumbled
Dressing
  • 1/3 cup olive oil
  • 1/2 lemon juiced
  • 2 tablespoons red wine vinegar
  • 1 pinch sugar
  • 1 teaspoon oregano
  • 1/2 teaspoon basil

Instructions

  1. Combine all dressing ingredients in a small bowl and mix well. Or alternately add all ingredients in a mason jar with a tight fitting lid and shake to mix.

  2. In a large bowl combine the red onion, black olives, green pepper, tomatoes, cucumber and feta cheese.

  3. Pour the dressing over the salad and toss to combine.
