Banana Pancakes with Apple Topping!

Ingredients

Pancakes
  • 2 bananas , mashed
  • 1 cup flour
  • 1 tablespoons sugar (granulated or brown)
  • 2 ½ teaspoons salt
  • 1 egg
  • 1 cup milk
  • 2 tablespoons cooking oil
Topping
  • 3 apples
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon
  • ¼ cup water

Instructions

  1. Combine dry ingredients in a large bowl. In another bowl, combine wet ingredients and add to the flour mixture. Stir just until combined and add the mashed bananas.
  2. Cook over a greased hot griddle, using about ¼ cup of batter per pancake for a couple of minutes on each side until bubbles start to appear and the edges start to look somewhat dry.
Topping
  1. Peel and thinly slice the apples and combine them in a bowl with the sugar, cinnamon and water. Cook in a skillet for 10 minutes and spoon on top of pancakes.
