How to Make Slow Cooker Tortilla Soup
Just like Slow Cooker Chicken Enchilada Soup simply place the ingredients in the crock pot and walk away. Right before serving, shred the chicken and enjoy! So easy.
- Cook onion, garlic, and jalapeno (or green chiles) in olive oil until they are softened and add to the Crock Pot.
- Place all ingredients in the slow cooker and cook on high for 4 hours or low for 8.
- Before serving, shred the cooked chicken and add back to the soup.
Serve with tortilla strips or broken up tortilla chips for extra crunch!

Crock Pot Tortilla Soup

Ingredients
- 6 6-inch corn tortillas cut ¼-inch strips
- 1 tablespoon olive oil
- 1 onion chopped
- 3 cloves garlic large, minced
- 1 jalapeño diced and seeded
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- 14 oz crushed tomatoes
- 1 can Rotel tomatoes
- 4 cups chicken broth
- 14 ½ oz canned black beans drained and rinsed
- 1 cup frozen corn
- 2 chicken breasts
- ¼ cup cilantro
Instructions
- Cook onion, garlic and jalapeño in olive oil. Add to the bottom of a slow cooker.
- Add remaining ingredients (except tortillas and oil) to the slow cooker and cook on high for 4 hours.
- Shred chicken and add back to the pot. Serve with tortilla strips.
Crispy Tortillas
- Heat oil over medium-high heat a small pan. Add tortilla strips in small batches and fry until crisp. Drain on paper towels and salt.

Can chicken thigh be subbed for chicken breast?

Yes, you can! I would suggest 7-8 hours on low.

This was a tasty recipe and easy to put together; however, the ingredient list needs to be more specific with the chicken. If I hadn’t seen the picture I would be guessing, two split chicken breasts? Two whole breasts? Bone in? Boneless? Like so many recipes, the lack of either a better description of the item or weights is frustrating. I know enough about cooking to have figured it out–but there are beginning cooks who need better instruction.

This recipe was good even without the fried tortilla strips. I added 1 t salt and pepper while cooking. I also added shredded pepper jack cheese to the top when finished. Easy and tasty. Thank you.
The flavor was on point, but it was a wet mess. I added the 4 cups of broth and didn’t drain the tomatoes and only the black beans. Did I miss something in the recipe? I want to give it a second attempt, but it was so watery :(
Did you use crushed tomatoes? There would be no liquid to drain if you use crushed tomatoes. If you’re finding this soup too thin for your liking, you can certainly add a cornstarch slurry. Mix equal parts cornstarch and cold water (start with about a tablespoon of each) and stir in a little at a time until it reaches the desired consistency.
My 1st tortilla soup ever, it’s delicious! I doubled the recipe. I read few reviews mentioned the lack of salt so I went ahead and added 2 teaspoon of salt and, for our taste, it is perfect (I bought many ingredients low sodium). Thank you! I will definitely make it again!
This was delicious! We added a dollop of sour cream and a some shredded cheddar cheese. We removed the jalapeno seeds so it wasn’t very spicy. Adding a splash of hot sauce works fine.
