This is a simply adorable recipe for St. Patricks day!  These are easy to make and the Jell-O makes these extra moist and tasty!!

Kiddos will go crazy for these yummy treats! Airheads Extremes can be found at most grocery or convenience stores!  You can use any type of green cupcake liners, be sure to check your local dollar store or craft store!!

Lucky Lime Poke Cupcakes

This is a simply adorable recipe for St. Patricks day!  These are easy to make and the Jell-O makes these extra moist and tasty!!

Ingredients:

  • 1 box White Cake Mix
  • 1 cup Water
  • 1/3 cup Vegetable Oil
  • 3 Eggs
  • 3 oz Lime Gelatin
  • 1 cup boiling Water
  • 1/2 cup cold water
  • AirHeads Extremes
  • 2 tbsp Milk
  • 1 cup softened Butter
  • 4 cup Powdered Sugar
  • Green Food Coloring

Directions:

  1. Make cupcakes according to box directions and cool completely on a wire rack.
  2. Using a fork, poke holes in each cupcake. Mix Jello and boiling water stir until dissolved. Add 1/2 cup cold water and gently spoon over cupcakes. Refrigerate for at least 15 minutes.
  3. Meanwhile, in a large bowl, cream the butter and add in the milk. Add in Powdered sugar a bit at a time mixing until fluffy.
  4. Transfer 1/4 of the icing to the corner of medium size zipper bag. Snip off a small piece of the corner to pipe. Set aside.
  5. Add several drops of green food coloring to remaining icing and mix until color is blended.
  6. Transfer icing to the corner of large size zipper bag. Snip off a small piece of the corner to pipe. Set aside. Cut each strip of the AirHeads Extremes into 2 1/2 – 3 inch lengths.
  7. Ice the top of each cupcake with green icing. Pipe a white cloud on each side of the green and insert the Airheads strip between them to make a rainbow.
