Taco Salad Ingredients

The beauty of this tex-mex inspired salad is the fact that you can customize it to what you have on hand or whatever your taste buds desire!

1. Beef:

    • I use lean beef but ground turkey or chicken will work too, or even juicy shrimp.
    • I prefer spicing this dish up with my Homemade Taco Seasoning but store bought will do in a pinch!
    • Black beans or pinto beans are great additions too.

2. Lettuce:

    • Romaine lettuce is a great healthy choice.
    • Try Iceberg lettuce for a refreshing crunch.
    • Make sure to chop or tear it into pieces that are big enough to hold the meat and beans!

All the ingredients to make a taco salad assembled on a wooden board.

3. Toppings:

    • Cheese – I love using cheddar cheese but shredded marble, mozzarella or Monterey Jack would be delicious choices.
    • Tortilla Chips – Pick your favorite flour or corn tortilla chip but be sure to add just before serving to retain that crunchy texture! Try using your favorite dorito chips instead to make this delicious Dorito Taco Salad version.
    • Veggies – Add a delicious assortment of veggies like olives, bell peppers, onions, jalapenos, avocado or green chiles on top.

4. Dressing:

    • Classic – Sour cream and salsa is our go-to dressing for this salad.
    • Creamy – Try a Ranch Dressing or Avocado Dressing. These will compliment the ground beef and spicy jalapenos perfectly.
    • Zesty – Or you can use Thousand Island Dressing or store bought Catalina for a yummy alternative.

Avocado, jalapenos, tomatoes, beans, red onion, cheese, ground beef, cheese and tortilla chips all on top of a bed of lettuce in a brown bowl.

What to Serve with Taco Salad

This Taco Salad is definitely a full meal in itself, simply pair it with a cold beverage like horchata, lemonade, or even a fruity Sangria or Margarita!

Feeding a larger crowd? Add Spanish Rice or this zesty Cilantro Lime Rice to your menu! In keeping with the Mexican theme and to finish off the evening, try some dulce de leche, Mexican chocolate mousse or Easy Sopapilla Cheesecake for dessert!

If you want to keep your menu super simple, serve warmed soft tortillas on the side to create a quick taco or burrito at the ready.

Ground Beef is a go to for us for easy weeknight dinners! It cooks quickly, and is perfect in recipes from Ground Beef Stroganoff to a good meaty Homemade Pasta Sauce. We prep a lot of ground beef ahead of time making life (and meal planning) even easier!

The uses are endless, below find our favorite ground beef recipes from soups and casseroles to snacks and appetizers!

A collage of the best ever ground beef recipes

What to Make with Ground Beef

Your family is hungry and you’ve got a pound of ground beef ready to go and you’re wondering what to make for dinner with ground beef! You’ve come to the right place. Below are my favorite ground beef recipes from cheesy and creamy to lean and healthy! Beef is great for more than just burgers and spaghetti!

How to Cook Ground Beef

Depending on the recipe, you may need to pre-cook (or brown) the ground beef. Regardless of the preparation method, cook ground beef to a minimum temperature of 160 °F to destroy harmful bacteria.

When browning ground beef, I prefer a medium-high temperature and a tiny bit of oil to get a nice brown on the meat. Always make sure there is no pink remaining and your beef is thoroughly cooked.

Ground Beef Safety

Raw Ground Beef can stay in the fridge for 1 to 2 days (cooked ground beef will last 3 to 4 days). Your package from the store should have a date on it. If you’re going to keep it longer than that, freeze it! Remember to always cook ground beef to a minimum temperature of 160 °F.

To Freeze Ground Beef

  • Freeze ground beef in a donut shape, this allows it to defrost quickly and evenly.
  • How Long Does Ground Beef Last in the Freezer? If your ground beef is well sealed, it should last just fine for 3 to 4 months in the freezer (either raw or cooked).
  • How to Defrost Ground Beef: To prevent harmful bacteria from growing, the best way to thaw ground beef is by placing it in the refrigerator for up to 48 hours.
  • To thaw ground beef quickly, place the beef in a sealed freezer bag and place the bag in a sink or bowl of cold water (never warm or hot). You can also defrost beef in the microwave (if you use this method, be sure to cook it immediately to keep it safe).

I’ve been asked How to Tell if Ground Beef is Bad. My friends, this is not a place to fool around. If you have to ask this, I’d say throw it out (or when in doubt…. throw it out). If you have ANY question about the age or safety of your food products, please don’t keep it. It’s not worth the risk.

How to Brown Ground Beef

How to brown ground beef for use in recipes from tacos to casseroles!

  • 1 lb lean ground beef
  • 1 tablespoon olive oil (optional)
  • salt & pepper to taste
  1. Place oil in a skillet and heat over medium-high heat.
  2. Add beef salt, pepper.
  3. Cook over medium-high heat breaking up meat stirring only occasionally. Don’t stir too much.
  4. Continue cooking until no pink remains. Drain any fat.

Olive oil (or vegetable oil) is optional but helps the beef to brown better. Don’t stir too much, cooking the beef without stirring allows it to actually ‘brown’ which adds great flavor!

What Are Croutons?

In an era where nothing goes to waste (doesn’t that still apply today?), croutons were made from the very last slices of bread, cut into cubes, seasoned and then baked to a crispy perfection.

Whether you are making croutons for salad or croutons for soup, pop open a can of biscuits and take the easy way out on a busy day!

Homemade crouton ingredients on a working surface like bread cubes, parsley, and onion powder.

What To Add To Croutons

Croutons are versatile, and the recipe can be changed to fit whatever you’re adding them to. Some of my favorite additions include:

  • Bread: Sourdough, leftover rolls, stale bread
  • Dried Seasonings: Rosemary, Dried basil, Italian seasoning
  • Fresh Seasonings: Lemon zest, fresh herbs & parsley
  • Cheeses: Parmesan, cheddar

How to Make Croutons

Croutons are as easy as 1,2,3 to make and they keep well in the pantry for up to a month! To make these delicious crunchy morsels:

  1. Dice: Dice the bread into cubes and place in a bowl. You can use any kind of bread here, even leftover french bread or sliced breads will work!
  2. Toss: Toss with melted butter, seasonings and parmesan cheese.
  3. Bake: Bake until golden.

Serve on a tossed salad, greek salad, or your favorite soup or stew recipes!

Dried Croutons will last on the counter for about a week. If you’re keeping these longer, you can freeze homemade croutons. No need to defrost first, they can be added directly to your favorite dishes and salads!

Classic Spaghetti and Meatballs https://www.spendwithpennies.com/spaghetti-and-meatballs/ https://www.spendwithpennies.com/spaghetti-and-meatballs/#comments Tue, 21 May 2019 13:34:40 +0000 https://www.spendwithpennies.com/?p=149390 Spaghetti and Meatballs is a comforting main dish that never goes out of style. Serve this on your next weekly meal plan! ]]>

Spaghetti and Meatballs is a family favorite that never goes out of style. Tender beef and pork meatballs are simmered in an easy homemade tomato sauce and served with spaghetti. Like most pasta recipes, this easy favorite is perfect topped with a sprinkle of parsley and some parmesan cheese.

Serve this easy Italian favorite with a loaf of homemade garlic bread and a tossed salad or caesar salad.

A plate of spaghetti and meatballs topped with parsley and parmesan cheese

How to Make Spaghetti and Meatballs

Spaghetti and meatballs is delicious and needs time to cook but the prep time is pretty fast, most of the time is spent simmering. Usually, I make the sauce first, and while that’s simmering, I move on to the meatballs.

The secret to the full-bodied flavor in this sauce is that you let it slow simmer for a minimum of an hour, and cook the meatballs right in the sauce after a quick brown! This method allows the flavors to deepen and develop, and the sauce to thicken too. An added bonus is that the smell of traditional Italian spaghetti and meatballs will fill your kitchen with its heavenly fragrance!

Ingredients for spaghetti sauce to make spaghetti and meatballs in a large dutch oven

Tomato Sauce for Spaghetti:

Similar to my favorite Marinara Sauce, this tomato sauce is a very easy to make and the flavor is only made better by the addition of meatballs! I use whole Italian tomatoes (San Marzano are best for flavor).

  1. Dice and prep all your ingredients for the sauce!
  2. In a large pot, sauté your onions and garlic until softened and fragrant! Your kitchen should begin to smell heavenly!!
  3. Add the rest of the ingredients, cover, and simmer on low for an hour, stirring occasionally.

That’s really all there is to it! After the sauce has simmered for about an hour your ready to move onto the meatballs!

A wood board topped with ingredients to make homemade meatballs for spaghetti

Meatballs for Spaghetti and Meatballs:

I use both ground beef and ground pork, plus a generous amount of shredded parmesan cheese and Italian herbs in my homemade spaghetti and meatballs (and the fresh parsley in the recipe makes a big difference, please don’t skip it). The hearty flavor is amazing.

I often bake big pans of my favorite meatball recipe in the oven and freeze them for easy meals like this one. If you’ve got homemade frozen meatballs, use those in place in this recipe (just give them time to simmer to flavor the sauce). Store bought meatballs work in a pinch but the flavor and texture truly cannot compare to homemade.

  1. Combine all the ingredients in a large bowl.
  2. Form into meatballs and give them a quick brown in a frying pan
  3. Place them right into the simmering sauce, cover and continue simmering on low for half an hour.
  4. Uncover and allow the sauce to boil down and thicken to your desired consistency.

What to Serve With Spaghetti and Meatballs

When it comes to what goes best with spaghetti and meatballs, I always fall back on the traditional sides, and everybody always enjoys it! Serve it with Cheesy Garlic Breadsticks, warm garlic bread or biscuits. Add in a fresh green tossed salad or caesar salad!

A pot of homemade spaghetti and meatballs ready to serve

How to Freeze Spaghetti and Meatballs

Spaghetti sauces freezes perfectly! Just let it cool, then ladle into freezer safe containers, leaving about an inch of headroom for expansion. Meatballs are great to make ahead and freeze as well. They’ll keep for up to four months, so go ahead double up the recipe. Defrost in the fridge overnight and reheat over medium low heat on the stove top.

Keep the pasta separate and freeze only the sauce. While the sauce it heating, boil up some fresh spaghetti for an easy meal ready to go!

To Juice and Zest Lemons

Whether you fill or frost or ice with this lemon buttercream recipe, make sure your pastries are fully cooled so it doesn’t melt the frosting.

Lemon Zest: Using the zest of the lemon adds the best flavor making it extra lemony. I use the zest of two full lemons, you can certainly use more if you like. You can find tips on zesting lemons here but favorite tool is a Microplane grater. You may notice the little oils from the rind when you zest so I like to zest right over the bowl I’m using for the frosting to make sure I catch all of that beautiful zest.

Lemon Juice: For juicing lemons, place lemons in the microwave about 15-20 seconds to warm them up and make them easier to squeeze. Using the heel of your hand, give them a roll on the counter with gentle pressure before cutting in half. If you have extra juice, place it in a small freezer bag and freeze. I break off small pieces to add to water or when I need lemon juice in a recipe!

  2. Add lemon zest and juice and mix well.
  3. Add the powdered sugar a bit at a time and mix well. Once it’s fully incorporated, mix on high for a couple of minutes until light and fluffy!

If you’d like a bit of a thinner consistency, add a bit extra lemon juice. For a thicker consistency, add more powdered sugar. If you’re spreading this on a 9×13 cake or another use where it doesn’t need to hold its shape, you can also add in 2 ounces of cream cheese along with the butter for a little tang. If you add the cream cheese, it won’t hold it’s shape as well when piped.

Because this is flavored with natural lemon the color is a very pale yellow. Feel free to add in a couple of drops of yellow food coloring if you’d like to brighten it.

Can You Freeze Buttercream Frosting?

Your lemon buttercream frosting will keep in the fridge about 4 to 5 days and will freeze up to three months in a sealed and labeled container or plastic bag.

Allow it to thaw completely and feel free to refresh the flavor with a bit of extra lemon juice and whisk it so it is smooth again!

Easy Banana Bread (no fail recipe) https://www.spendwithpennies.com/easy-banana-bread-recipe/ https://www.spendwithpennies.com/easy-banana-bread-recipe/#comments Sun, 19 May 2019 19:18:08 +0000 https://www.spendwithpennies.com/?p=33220 I know the ingredients may seem weird, but trust me, this Easy Banana Bread is the best! With very few ingredients you only need a few minutes of prep!]]>

Easy Banana Bread recipe is one that I’ve made about a million times! Learn the trick to how to make banana bread moist and delicious. With very few ingredients and only a few minutes of prep, this simple banana bread is the perfect way to enjoy your ripe bananas!

sliced banana bread made from easy banana bread recipe

The Best Banana Bread Recipe

This banana bread recipe is so quick and easy to prepare, perfect for busy households! It makes a most delicious afternoon snack for hungry kids after school or enjoy banana bread for breakfast paired with a warm mug of coffee!

It’s incredibly moist and easy to make. You likely have everything you need for this recipe!

Banana Bread Ingredients

  • BANANAS for Banana Bread: Bananas that are too ripe to enjoy eating are perfect for making bread! The riper the bananas, the easier to make and they give a great sweet flavor!
    • How Ripe Should Bananas Be for Banana Bread? You want your bananas to be ripe with many black spots, this means they’re soft and full of sugars. You can peel them and freeze them to make banana bread at a later date too.
    • To Ripen Bananas: Uhoh, you have beautiful yellow bananas, perfect for a smoothie or banana pudding but not so much for banana bread! To ripen bananas in a day or two, place them in a paper bag (with other ripe fruit if you have any) and seal. To ripen immediately, you can bake them at about 300°F for 15-20 minutes. Be sure to allow them to cool before using in this recipe.
  • EGGS & OIL: Eggs and oil add moisture to quick breads. In this recipe we replace some of the oil with mayonnaise (which is made of… eggs and oil)! While this may seem like a weird ingredient, as you can see from the reviews on this recipe, it produces a moist banana bread!

How to Make Banana Bread

This extra moist banana bread recipe is one of the easiest you’ll ever make. It’s very important not to overmix this causes a dense chewy loaf instead of a tender moist banana bread.

  1. Combine dry ingredients in a bowl.
  2. Combine bananas (of course), mayonnaise and egg in a second bowl.
  3. Mix the two together just until moist.
  4. Pour into a greased pan and bake.

I make a Chocolate Mayonnaise Cake which is to die for. If you have never had a bread or cake made with mayonnaise before, you MUST try it. Banana Bread with Mayonnaise? I know it may sound a little bit strange, but mayo is made of oil and eggs which are basically staple ingredients in this quick bread anyhow and will make this banana bread soft and moist.

Butter melting over banana bread from a moist banana bread recipe

How to Make Banana Bread Moist

Banana add not only flavor to this bread but also moisture. Make sure your bananas are very ripe with lots of black spots! Ovens can vary so be sure to check your bread at least 10 minutes before the time is up just to be sure.

Tips for Moist Banana Bread

  • The batter is thick, do not add extra liquid.
  • Avoid adding extra bananas, this can make the bread too dense.
  • As with all quick breads, do not overmix. Stir just until incorporated.
  • Do not overcook
  • Seal well once cooled (a freezer bag works well too).

You can add in pecan or walnuts or chocolate chips to this banana bread recipe. For easy removal, line the loaf pan with parchment paper leaving about 3 inches of paper folded over the top of the pan. Serve it with Whipped Strawberry Butter or Honey Butter.

How to Store Banana Bread

I much prefer to store this banana bread recipe on the counter at room temperature. How long does Banana Bread last? Banana bread should last about 3 days tightly sealed on the counter.

To FREEZE Banana Bread: Of course this easy banana bread freezes beautifully. You can either freeze the loaf as a whole or slice it and freeze the slices. To defrost a slice just pop it in the microwave for a few seconds or even just add it to the lunch box frozen, it’ll defrost in plenty of time for lunch!

Once you try it, this award-winning easy banana bread recipe will definitely be your go-to recipe!

Baked bruschetta chicken breasts topped with tomatoes and basil and served over a bowl of spaghetti

An Easy Weeknight Meal

Don’t be afraid of the fancy Italian-sounding name “Bruschetta.” I make a ton of tomato bruschetta all summer long and we often end up eating it for meals or served over chicken!

Kind of like Easy Chicken Parmesan, this bruschetta chicken recipe is a make-ahead and pop-in-the oven kind of entrée. Tender chicken breasts covered in a garlicky, seasoned marinara, cherry tomatoes, and bubbling mozzarella cheese! Perfect for Sunday dinner with the extended fam. Who can say no to that?

Cooked Chicken breasts in a 9x13 pan topped with cheese and cherry tomato bruschetta

Bruschetta Chicken

Bruschetta is an appetizer many of us are familiar with however, did you know that the word bruschetta actually refers to the bread and not the topping? I took the flavors from my favorite bruschetta topping (tomato/basil/garlic) to create this amazing meal!

What is Bruschetta Chicken? Bruschetta chicken bake is full-flavored and hearty; the topping is baked right onto the chicken breasts. Turn this into a complete meal by serving it over spaghetti for the perfect Bruschetta Chicken Pasta. Mama Mia!

Raw chicken breasts topped with Italian seasoning, balsamic vinegar and olive oil for making bruschetta chicken

How to Make Bruschetta Chicken

This meal is pretty easy to make and uses basic ingredients. Fresh basil isn’t expensive but it makes a huge difference in the flavor of this dish! If you can’t find cherry tomatoes, grape tomatoes (or even chopped roma tomatoes) will work just fine.

  • Marinate: Combine olive oil, balsamic vinegar and minced garlic in a small bowl and marinate chicken breasts for a few minutes.
  • Brown: Brown the chicken for two minutes on each side. The chicken will cook in the oven, you just want to brown it.
  • Bake: Place in a 9×13 casserole dish and top with cherry tomatoes. Bake until bubbly.
  • Top: Top with cheese and broil up to 3 minutes or until melted.

To Serve this Chicken Dish

For the topping, combine tomatoes with olive oil, vinegar, and basil garlic. Spoon over the finished dish and serve over pasta!

What to Serve with Bruschetta Chicken

A great glass of Chianti, of course! A light, bright tossed salad, and some garlic bread rounds out this unforgettable entrée! For a true Italian dining experience, a little Tiramisu or Panna Cotta makes for a sweet ending!

A Simple Side Dish

Want to take your veggie game to the next level? There are so many new and tasty ways to enjoy the vegetables we grew up with (zoodles anyone?). This easy baked cauliflower recipe will please vegetarians and carnivores alike!

Cauliflower is a nutritional powerhouse with just 50 calories per 2 cups and packed with fiber. This baked cauliflower recipe is a simple fix on a busy night and can easily be placed in the oven along with your favorite meatloaf recipe or even placed in the pan with a roasted chicken!

How to Prepare Cauliflower Florets

Cauliflower is a compact and heavy vegetable, so it is easy to work with. For this baked cauliflower recipe:

  • Remove any green leaves at the bottom and cut off the stem.
  • Cut the entire head in half vertically from the stem up.
  • Then, with your fingers, break apart each half into smaller pieces. These are the florets. Break them up as big or small as you like. Think about if you will be using a fork or your fingers to eat them with!

A photograph of cauliflower florets on a baking pan

How to Make Baked Cauliflower

I keep it very simple but if i have fresh herbs on hand, I add those in too! Feel free to season with anything you like even toss with dressing after it comes out of the oven! After rinsing, drain them extra well. Any leftover water will cause them to steam and they won’t brown as nicely.

  1. Preheat oven.
  2. Toss cauliflower florets with olive oil and your fave seasonings.
  3. Spread on a greased sheet pan and bake:
    • Bake at 350°F about 30-35 minutes
    • Bake at 375°F about 25-30 minutes
    • Bake at 400°F about 20-25 minutes

These times are a guide if you like your cauliflower softer, cook it longer if you prefer more tender crisp, cook it less. A higher temperature will give more browning (and flavor). I personally don’t stir them, I like one side to get nice and browned. Don’t overcook them, you still want them to be a little crunchy!

Stovetop Mac and Cheese is the creamiest, dreamiest version of an all-American favorite! No one can resist a savory combination of a creamy cheddar cheese base blended with macaroni noodles, and it couldn’t be easier made on the stovetop.

Serve this creamy homemade mac and cheese with a fresh tossed salad, some garlic bread, and roasted broccoli for the perfect rounded meal!

Creamy stovetop macaroni and cheese in a cooking dish with a wooden spoon.

How to Make Stove Top Mac and Cheese

This stovetop mac and cheese is the creamiest version! The secret to this recipe is that the pasta is boiled in milk (which means only one pot for easy clean up). It’s as easy as 1,2,3!

  1. Combine milk, garlic powder, butter and water in a saucepan and bring to a boil.
  2. Add in the macaroni noodles and reduce the heat to low (adding liquid as needed). Cook until the noodles are tender, about 20 minutes.
  3. Once the pasta is fully cooked, add the rest of the ingredients and stir until melted.

The final result is a smooth and hearty easy family entrée that everyone will love and want seconds of!

Troubleshooting

This recipe is really easy to make but here are a few to tips to make sure it comes out creamy.

When the macaroni is done cooking in the milk, you do not want it dry. You may need to add more milk/water to the pot while it is cooking. The macaroni noodles should be as moist as the photo on the top right below BEFORE you add in the cheese. Once you add the cheese, remove it from the stove and stir until the cheese has melted.

Keep in mind, pre-shredded cheese often has additives to keep it from clumping. These additives can cause it to be grainy instead of creamy.

Process shots of stovetop macaroni and cheese being made from the pasta being cooked to the cheese being added.

What Goes with Mac and Cheese?

Everything goes with stovetop mac and cheese! A salad with a bright balsamic vinaigrette, or a crusty loaf with Homemade Garlic Butter can round out this meal.

Fresh fruit salad or a tangy gelatin dessert go well for with this rich macaroni. When you serve this creamy stovetop mac and cheese, almost anything goes.

Add ins: You can get creative with this recipe. Add in bacon, jalapenos, canned tuna, peas, even topping mac and cheese with fresh pico de gallo!

Cheese being stirred into stovetop macaroni and cheese with a wooden spoon.

Got Leftovers?

Mac and Cheese leftovers can last 4-5 days in the fridge. Reheat on low on the stove top (or in them microwave) and add a splash of milk to keep it creamy.

Can You Freeze Mac and Cheese? The best creamy mac and cheese recipes are served just as they’re made, including this one. This recipe doesn’t freeze well.
