Creamy Potato Salad is pretty much a staple for any cookout or barbecue. Perfect to serve alongside a thick grilled burger, tender grilled chicken breasts or even next to a juicy steak!

Tender potatoes, crisp veggies, a handful of green onions and chopped hard boiled eggs are tossed in a simple and creamy dressing. This easy potato salad recipe tastes even better when made ahead of time making it the perfect dish to take along to parties and potlucks!

A Classic Side Dish

For an inexpensive and filling side dish, you can’t beat a creamy potato salad (and of course a delicious pasta salad recipe right next to it). Every family has their favorite add-ins and of course this is one of my all time favorites! This classic potato salad recipe has just the right amount of crunch, tang and creaminess to satisfy any appetite.

The ingredients for classic potato salad start with basic staples found in almost any kitchen: potatoes, hard-boiled eggs, celery, onion and mayonnaise. With these ingredients as the backbone, you can layer in other ingredients using your own taste as your guide.

Ingredients for Potato Salad

  • POTATOES: I use baby potatoes as they are a little sweeter and need no peeling. Truly any potato will work for potato salads but red and yellow skinned potatoes tend to hold their shape better. Russets can fall apart but still taste great if it’s all you have on hand.
  • ADD-INS: The possibilities are endless. We love potato salad with eggs but if eggs aren’t your thing, skip them! Sliced radishes and celery add a bit of crunch. You can also add in your favorites such as chopped pickles, cheddar cheese or a handful of crumbled bacon!
  • POTATO SALAD DRESSING: This recipe has a creamy dressing and it’s super easy to prepare. Classic flavors include cider vinegar, Dijon mustard, a touch of sugar and relish. You can use either sweet or dill. Add your favorite herbs or spices like dill to create a Creamy Dill Potato Salad!

It is important to ensure that your potatoes are cooled before you add this dressing as it has a mayonnaise base.

How to Make Potato Salad

How Long to Boil Potatoes for Potato Salad? This can vary a bit based on the size and type of potato. Bite sized potatoes will take about 12-15 minutes after the water boils, but you really need to test for doneness by piercing them with a fork. Take them off the heat and drain when the fork can be easily inserted, but before the fork would make them fall apart.

Just like when making creamy mashed potatoes, you want to make sure you don’t overcook them! They absorb a lot of water as soon as they are finished cooking and will get too mushy. To prepare, place them in the pot of cold, salted water and set it on high heat to boil.

To Make Potato Salad

Once the potatoes are cooked and cooled completely, the rest of your job is simple! Here’s all you do to make this easy potato salad:

  1. Mix the dressing in the bottom of a large bowl.
  2. Add the cooked and fully cooled potatoes along with your mix-ins.
  3. Mix well, season with salt and pepper to taste. Refrigerate at least 2 hours before serving.

For the best tasting homemade potato salad, place the bowl covered in the refrigerator for several hours to allow the flavors to build and develop.

Can You Freeze Potato Salad?

Unfortunately, potato salad is one of those rare dishes that doesn’t hold up well to freezing. The raw veggies that give it such a delightful crunch will get mushy, and the mayonnaise will separate when it thaws. So for the best potato salad, always plan on making it fresh. It will keep in the refrigerator for about three days.

Classic Potato Salad

This is a classic potato salad recipe, with a little extra flair for just the right amount of crunch, tang and complex flavors to satisfy any appetite.

  • 2 1/2 lbs baby potatoes
  • 1/2 cup sliced radishes
  • 1 cup diced celery
  • 6 boiled eggs (chopped (optional))
  • 2 green onions (sliced)
  • paprika for garnish (optional)

Dressing

  • 3/4 cup mayonnaise
  • 1/4 cup relish ((sweet or dill pickle))
  • 1 tablespoon dijon (or yellow mustard)
  • 2 tablespoons cider vinegar
  • 1 teaspoon sugar
  • salt & pepper to taste
  1. Boil the potatoes in salted water until tender (approx. 15 minutes). Cool completely and cut in halves or quarters.

  2. Mix all dressing ingredients in the bottom of a large bowl. Add remaining ingredients and toss well. (I slightly mash the potatoes while mixing to make it creamy).

  3. Refrigerate at least two hours before serving.

Ham and Spinach Frittata is a snap to assemble, quick to bake, and can be adapted to add in your favorite fillings! We love making homemade frittata for Sunday brunch, but it’s easy enough to be a weekday breakfast too (or even dinner)! 

Frittata is a very versatile recipe and you can add any combination of ingredients you’d like! This easy frittata recipe can even be made into spinach frittata muffins for a make ahead breakfast on the go! It’s easily made ahead and reheats well. Just add a side of home fries!

What is Frittata?

Like a quiche recipe, frittatas are egg-based recipes, but frittatas are crustless, which makes them perfect for people following a gluten free, Paleo or even a Keto diet (if you skip the potatoes). Both low carb and healthy! It’s similar to an omelet but can be easily scaled to serve a lot of people.

The other difference between a quiche and a frittata is the ratio of egg/dairy; a frittata only has a bit of dairy.

How to Cook a Frittata – There are a different ways to make a frittata, one being to cook the eggs stovetop until almost set and then broil/bake to cook the top. However, I find it easier just to bake frittata in the oven.

How to Make Frittata

This spinach frittata recipe is a cinch because…well, eggs! Eggs are the perfect base for anything whether it’s breakfast, lunch, or dinner. Here’s how you make a frittata:

  1. Preheat the the oven.
  2. Cook your add-ins in an oven proof pan (potatoes, ham, spinach, and green onions).
  3. Whisk eggs, milk, and seasonings and pour over the add-ins. Top with cheese.
  4. Bake until the eggs are set, about 10 to 12 minutes. For a crispy top, broil for about 1 to 2 minutes.

Cool for about 5 minutes before serving to make sure the eggs are set and the cheese is perfectly melted! It’s simple to make and tastes great!

Creative Add-Ins

You can mix and match the ingredients for this easy frittata! Fresh or frozen spinach can be used in this recipe! Cook your add ins (except cheese of course) and bake in the oven! Whatever is in the fridge and pantry can be tossed into a frittata from potatoes and leftover spaghetti to Roasted Butternut Squash, steamed broccoli or even Grilled Zucchini!

Swap out the cheddar cheese (or add some crumbled feta or goat cheese). Why not try a spinach mushroom frittata or a spinach feta frittata? Cheese is an excellent compliment to eggs, any way you look at it!

Can You Freeze Frittata?

A frittata keeps for a few days in the fridge and reheats beautifully! It’s perfect to make ahead for lunches but it’s also great to put between a couple of slices of bread for lunch!

If you’d like to keep it longer than that, you can freeze a frittata. Freezing egg-based dishes is easy. Make sure the frittata is fully cooled and then portion as desired and place in freezer containers or freezer bags. Egg-based dishes are easy to reheat in the oven or microwave.

Ham and Spinach Frittata

This ham and spinach frittata is a snap to assemble, quick to bake, and can go anywhere in a moment’s notice! Perfect for a Sunday brunch or a weekday breakfast. 

  • 2 tablespoons olive oil
  • 1/2 lb baby potatoes (sliced)
  • 1/2 cup diced ham
  • 1 1/2 cups fresh spinach (torn (or 1/2 cup frozen spinach))
  • 2 green onions (sliced)
  • 1/4 teaspoon seasoned salt (or to taste)
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon black pepper
  • 8 eggs
  • 1/4 cup half and half
  • 1/2 cup cheddar cheese (divided)
  1. Preheat oven to 400°F.
  2. Heat olive oil over medium heat in a 10″ skillet. Add potatoes and 2 tablespoons water. Season with salt and pepper and stir. Cover and cook over about 10-15 minutes or until softened.

  3. Stir in ham, spinach, and green onions until hot and spinach is wilted.
  4. In a medium bowl, combine eggs, half and half, dry mustard and seasonings. Pour over potato mixture. Top with cheese.

  5. Bake 10-12 minutes or until eggs are set. Broil 1-2 minutes.

  6. Remove from the oven and cool 5 minutes before cutting. Serve warm.

Tres Leches Cake: Also known as milk cake, this sweet cake is a classic butter yellow cake that is soaked with a sweet milk syrup and topped with whipped cream and strawberries.  The sweet milk is made up of three different types of milk, hence the name–three milks.

While the name sounds fancy, it’s a simple poke cake, like our favorite Chocolate Poke Cake From Scratch!

I am a big fan of desserts, especially desserts like these three ingredient peanut butter cookies, or pecan sandies. I am typically a cookie lover, but sometimes I want cake, and this easy tres leches cake is a total favorite. It is so delicious. And I have a secret that makes this tres leches cake recipe easy too!

Does Tres Leches Cake Have Alcohol?

Typically, no, but you could easily add some rum to the milk syrup if you want some alcohol in it.

The rum goes well with the cinnamon and the milks really well. Just remember, you do not bake the milk syrup. So the alcohol will not be baked off.

Honestly, you can add all kinds of variations to this tres leches cake. I add a little cinnamon to the batter because I love the richness and depth it gives the cake. And I top with fresh strawberries (but this is not necessary).

How to Make Tres Leches Cake

This cake is made with three layers: Cake, filling, and topping.

I like keeping things eazy peazy (hahaha) and so to make this cake I start this tres leches cake with cake mix. I used a butter yellow cake mix. However, the awesome thing about this recipe is you can use any light colored cake mix you have. White cake mix, yellow cake mix, and butter cake mix all work well.

Of course, you can make the cake from scratch as well. And if you happen to be missing something, check out these baking substitutes.

The filling is made with 3 milks:

    • Evaporated milk
    • Sweetened condensed milk
    • Heavy cream

If you do not want your cake too sweet, then cut down on the sweetened condensed milk and replace it with equal parts heavy cream.

The topping is a whipped cream topping. It is a homemade whipped cream that uses heavy whipping cream, a little powdered sugar, and vanilla.

Strawberry tres leches cake is amazing. The strawberries are a really fun addition. This is a very sweet cake, so adding the berries adds just a little tartness that can cut through the sweet.

While the actual person who first created the tres leches is unknown, it does have Latin American roots. It was created many years ago and has evolved through the years into a standard celebration cake in certain regions of Mexico and even Nicaragua.

If you do not want to add fresh berries to the top of your tres leches cake, you can add a sprinkle of cinnamon to add some color and make it look great.

How long is Tres Leches Cake good for in the fridge?

Once a tres leches cake is covered with the sweet milk syrup, and topped with the whipped cream topping, it will last 4-5 days with refrigeration, but is best consumed within the first 48 hours.

The cake soaks up the liquid you dump over it, but it can get “soggy” if it sits too long. It is a nice moist, delicious cake, much like this banana pudding cake. But it can’t sit as long as other cakes without going bad.

Tres leches

Tres leches cake is a deliciously sweet cake that is soaked in milk syrup and topped with whipped cream.

  • 1 package butter yellow cake mix
  • 3 large eggs
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Topping:

  • 1 can sweetened condensed milk (14 ounces)
  • 1 can evaporated milk (12 ounces)
  • 1 cup heavy whipping cream

Whipped Cream:

  • 1 cup heavy whipping cream
  • 3 Tablespoons confectioners' sugar
  • 1 teaspoon vanilla extract

Garnish (Optional):

  • Berries
  1. Preheat oven to 350° F Grease a 13×9-inch baking pan with cooking spray.

  2. Combine cake mix, eggs, milk, vanilla, and cinnamon in a large mixing bowl.

  3. Beat with a hand mixer to combine until well incorporated. Pour into prepared pan.

  4. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack 20 minutes.

  5. In a large bowl combine evaporated milk, sweetened condensed milk, and heavy cream together. Whisk topping ingredients until combined.
  6. Use a chopstick or skewer, and generously poke holes in top of the warm cake. Pour milk mixture slowly over cake, and let the mixture absorb and fill the holes.

  7. Refrigerate, covered, at least 4 hours or overnight.
  8. Just before serving, add cream, confectioner’s sugar and vanilla, and beat until it begins to thicken. Continue to beat until soft peaks form. Spread over cake.

  9. Serve with sliced strawberries (optional)

Cilantro Lime Rice will transform taco night forever. Fluffy white rice is upgraded with colorful cilantro and fresh zesty lime to create the best side dish to accompany every Mexican dish you make! 

As much as we love Mexican Rice, we’re also in love with the zesty freshness created in this rice dish! We add this cilantro lime rice to burritos, serve it alongside Creamy Chicken Enchiladas, or using it as a side with other tex mex favorites like loaded nachos and taco casserole!

How to Make Cilantro Lime Rice

Basmati and long grain white rice are cultivated for their distinctive flavor profiles and are less starchy so they cook up drier and stay separated, which is perfect for cilantro and lime rice recipes. To make this cilantro lime rice recipe:

  1. RINSE: Rinse and drain 1 cup of basmati or long grain white rice (this keeps it from getting sticky).
  2. SIMMER: Bring water, rice, a bay leaf to a simmer.
  3. FLAVOR: Once cooked squeeze fresh lime over rice and add finely chopped cilantro, salt and pepper.

This Baked Butternut Squash recipe is one of our favorite easy side dishes. It only has 5 ingredients and tastes amazing! You can slice it or mash it and serve it alongside a roast or a meatloaf, or serve it as a delicious side with minimal prep work! 

Oven baked butternut squash is super packed with nutrients and available year-round. It even freezes well in plastic freezer bags for single servings. Just pull them out, add the toppings, and reheat!

How to Bake Butternut Squash

The most important thing about baked butternut squash halves, is how to prep them properly! Lay the whole squash on a towel and slice a small portion off the bottom. This creates a solid stand for slicing in half from top to bottom. Slice the squash lengthwise.

  1. Preheat oven to 375°F (and line a baking sheet with parchment paper for easy clean up).
  2. Cut the butternut squash in half and scoop out the seeds and the stringy bits.
  3. Brush with melted butter and sprinkle of spice (we love using pumpkin pie spice) and bake.

It’s that easy! To enjoy, slice, and serve!

How Long to Bake Butternut Squash

When you are getting ready to bake a butternut squash sliced in half, make sure the oven is preheated and ready to go.

It can take anywhere from 50 to 60 minutes to fully bake a butternut squash, and it is best to bake in the center of the oven to ensure even baking on both sides.

We sometimes scoop baked butternut squash into a bowl and mash it just like our fave Mashed Potatoes. Stir in your favorite seasonings, a bit of cream or sour cream, some butter (of course) and mash it until smooth.

This baked butternut squash recipe is one of our favorite easy side dishes. It only has 5 ingredients and tastes amazing! 

  • 1 large butternut squash (3-4 lbs)
  • 1/4 cup butter (melted)
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon (or pumpkin pie spice)
  • salt to taste
  1. Preheat oven to 375°F.
  2. Cut butternut squash in half lengthwise.
  3. Use a spoon to scoop out the seeds and stringy bits.
  4. Brush the squash with melted butter. Sprinkle with cinnamon (or pie spice).
  5. Place on a baking sheet cut side up and bake 50-60 minutes or until tender when pierced with a fork.
  6. Slice or mash with butter to serve.

We love comfort food around here, from shrimp and grits to homemade mac and cheese. Creamy and delicious, this homemade sausage gravy is totally irresistible!

How to Make Sausage Gravy

With just 5 ingredients, a great Southern Sausage Gravy is a cinch to make and pretty much fool proof! To make homemade sausage gravy:

  1. Crumble up the ground sausage while it cooks until the pieces are very fine.
  2. You need the fat to make the roux so do not drain the sausage once cooked (or even add a bit of bacon grease- so good!).
  3. Add the flour and cook for about two minutes.
  4. Add a little milk a bit at a time and keep stirring until it gets smooth and creamy. Bring it to a boil and then reduce the heat to a simmer until it is thickened.

Be sure to season sausage gravy with salt and pepper. Of course nothing goes hand in hand like Biscuits and Gravy so serve this sausage biscuit gravy right away (or put it over cornbread or serve with fried chicken)!

Tips for the Best Sausage Gravy

  • Seasonings: Make sure you use a seasoned sausage or add your own seasonings including sage, salt and pepper.
  • Fat: To make a good sausage gravy you need fat so don’t drain your sausage. Add in real butter and/or bacon fat for great flavor!

This Roasted Broccoli recipe is so easy to prepare. Most home chefs steam or stir-fry broccoli but oven roasted broccoli makes it perfectly tender-crisp and just barely browned on the outside adding a new dimension of flavor.

It’s a perfect side dish to serve with a homemade lasagna, pasta, or meatloaf or even alongside Oven Baked Chicken Breasts!

Roasted Broccoli is a favorite side dish recipe and it’s easy to make! While I love steamed broccoli for adding to recipes like Chicken Lasagna, roasted broccoli can stand on its own!

How to Roast Broccoli

To make roasted broccoli:

  1. Preheat the oven to 425°F.
  2. Wash and dry broccoli thoroughly, then cut into uniform pieces.
  3. Toss with olive oil and sprinkle on salt and pepper (or whatever seasoning you prefer, seasoned salt is delicious too.)
  4. Bake for 10 minutes and then flip pieces over and bake another 5-10 minutes or until broccoli is golden brown and crispy!

How Long to Roast Broccoli

As long as the pieces are uniform, roasting broccoli shouldn’t take more than 15 minutes if the oven is already preheated and ready to go.

If you’re cooking another dish in the oven, roasted broccoli temperature is pretty versatile. Keep in mind that a higher temp gives more brown bits = more flavor. Of course I have had success roasting it slightly longer at a lower temperature while a dish like million dollar spaghetti casserole is baking!

Tips for Roasted Broccoli

  • Keep It Dry: If your broccoli is wet (from washing) it will steam instead of roasting. Make sure it’s very dry before you roast (I even wash the day before or when I bring groceries home if I know I’ll be roasting it).
  • High Heat: Having the oven at a high temperature helps caramelize the broccoli making for the best flavor!
  • Season Well: Add olive oil and seasonings before cooking. I like the simplicity of salt & pepper but add in your favorite spice mixes to make it your own!
  • Cheese Please: Few things go with broccoli better than cheese! We add a sprinkle of parmesan (but any finely shredded cheese will work) and broil it for about 1 minute before serving.

Can You Roast Frozen Broccoli

Yes BUT… it may not crisp quite the same way (fresh really works best in this recipe)! Be sure that the broccoli is fully thawed and pat dry with a paper towel so it doesn’t get mushy in the oven. Roasted frozen broccoli cooks best when all the pieces are uniform in size and you can buy them already cut in boxes or bags in the freezer section of your local supermarket.

Instant Pot Chicken and Rice is incredibly delish and ready in … well, an instant. Tender shredded chicken and rice in a creamy mushroom sauce is the ultimate one pot comfort food!

When you are looking to get a delicious comforting meal on the table, let Instant Pot Chicken and Rice come to your rescue. There has been so much love on my 4 Ingredient Chicken Rice Casserole (um because it’s super amazing) but I’ve also had tons of requests to make it into an IP meal… so here we are! (If you’re new to the Instant Pot, start here).

Instant Pot Chicken and Rice Casserole

Not only is it quick and filling, it’s absolutely delicious! This easy chicken and rice recipe uses ingredients you likely have on hand already; white rice, skinless boneless chicken breasts, and a few veggies. Toss it all in the Instant Pot for the perfect quick casserole recipe!

Tips for Fluffier Rice

White rice has a tendency to get overly sticky, especially when cooked in a casserole with other ingredients. To prevent this happening, you can rinse your rice first to remove most of the excess starch. (This step is optional).

How to Make Fluffier Rice:

  • Fill a bowl with cold water and swish the rice around until the water turns cloudy.
  • Discard the water and repeat the process 2-3 times, until the water washes clear.
  • Drain rice in a strainer.

How to Make Chicken and Rice (Instant Pot)

This chicken and rice recipe is super easy, but be sure to add ingredients in order for the best results (and to avoid the dreaded “burn” notification on the IP). Here’s all it takes to get this 30 minute meal on the table:

  1. In order, add mushrooms, onion, rice and chicken to the Instant Pot.
  2. Top with chicken broth and finally put the mushroom soup on top.
  3. Set the Instant Pot to high pressure for 10 minutes.
  4. When the cooking cycle is done, let the Instant Pot depressurize naturally for 10 minutes. Release any remaining pressure.
  5. Remove the chicken. Stir the rice and mushrooms.
  6. Use two forks to shred the chicken. Stir back into the rice and serve.

Once cooked you may notice some liquid on top of the rice. Remove the chicken to shred and stir this into the rice. The Instant Pot is hot and it will continue to absorb while shredding the chicken.

Broccoli Lovers Rejoice

Just like in our favorite Crockpot Chicken and Rice, we love to add veggies to this recipe! One alternative version of this recipe is an Instant Pot chicken broccoli and rice casserole. If you want to try it, keep in mind that broccoli is really quite a delicate vegetable, and cooks super fast. It’s really easy to overcook broccoli into a mush, especially in the Instant Pot. So if you’re making this variation, make steamed broccoli separately and then add it in just before serving.

Cheese Please

If you want to up the comfort quotient on this dish even more, try cheesy chicken and rice! For this variation follow these steps:

  • Grate 8 oz. of extra sharp cheddar, or your favorite cheese, or use packaged, pre-shredded cheese.
  • After shredding the chicken, add a couple handfuls of cheese to the Instant Pot and stir.
  • Or sprinkle grated cheese over the top and melt under the broiler until the cheese bubbles and browns slightly.

  • 1 lb fresh mushrooms (sliced)
  • 1/2 onion (chopped)
  • 1 cup long grain white rice
  • 3 chicken breasts (7-8 oz each)
  • 1 3/4 cups low sodium chicken broth (or water)
  • 10 oz cream of mushroom soup (condensed)
  • salt and black pepper
  1. Grease inside of a 6QT instant pot. Season chicken breasts with salt and pepper to taste. Rinse rice under cool water until the water runs clear.

  2. In order add mushrooms, onion, rice, chicken breasts to the Instant Pot.

  3. Pour broth over chicken breasts. Spread mushrooms soup overtop of chicken breasts. Do not stir.

  4. Set instant pot to MANUAL. Choose HIGH PRESSURE for 10 minutes. (The Instant Pot will take about 15 minutes to reach pressure).

  5. Once completed, allow the Instant Pot to naturally release for 10 minutes. Release any remaining pressure.
  6. Open the Instant Pot and remove chicken. Stir rice and mushrooms. Shred chicken and return to rice and mix well.

  7. Garnish with parsley if desired and serve.

It seems like carrots are often overlooked as the central element in a dish, but they shouldn’t be. We use them all the time! From glazed carrots to roasted, they are inexpensive, and available year round and keep for ages in the crisper section of your refrigerator without losing their sweetness or crunch.

How to Make Carrot Salad

This is a simple dish to make, especially if you have a food processor! If you don’t have a food processor, a cheese grater works just fine!

This recipe is as easy as can be:

  1. Shred carrots.
  2. Combine all ingredients in a mixing bowl and mix well.
  3. Refrigerate for at least an hour so the flavors meld.

Ingredients in carrot salad include raisins, sour cream, mayonnaise, pineapple and a hint of vinegar. We use canned pineapple but if you have fresh on hand, chop it finely and use that! A delightful and exotic variation is Moroccan carrot salad! In this version, you would use lemon juice instead of vinegar, a clove of minced garlic, and cumin and cinnamon spices.

How to Shred Carrots

This is one recipe where a knife alone won’t do. You’ll definitely need a shredding blade of some kind to get the carrots just the right softened texture.

Shredding blades are found on mandolins, box graters and food processors.

  • Food Processor: Cut the tops and ends off each carrot and cut into 2-3 inch pieces. Fit your food processor with the shredding blade and pulse until shredded.
  • Box Grater or Mandolin: Simply wash, peel and cut the tips off the carrots, but don’t cut into pieces. It will be much easier to shred them while they are still whole.Box graters and mandolins have two shredding sizes. You’ll want to use the larger one. The finer blade turns the carrot to a messy pulp. Be prepared for a good arm workout!

Shredded carrot salad can be made ahead, and leftovers will keep for about three days in the refrigerator. I wouldn’t advise freezing it though as thhe sour cream can separate and curdle.

But guess what? You can freeze raw shredded carrot! Just place any unused portion into a plastic freezer bag and it will keep for up to four months. Add the shredded carrot to soups, Chicken Stew, casseroles and more!

What is Caprese Salad?

Fresh tomatoes, mozzarella cheese, basil, and a simple drizzle of olive oil are all it takes to make this colorful salad. The key here is sourcing the freshest ingredients available. Cherry tomatoes or bright red Roma’s are the perfect size for this salad, as well as a soft, creamy mozzarella, also known as mozzarella fresca (or bocconcini).

Drizzle with olive oil, a generous sprinkle of salt & freshly ground pepper and a few torn and a few torn basil leaves and voila! The perfect salad any time of year!

How to Make Caprese Salad

There are a lot of different ways to make a caprese salad.

  • TOMATOES: Since this is the base of your salad, find the ripest juiciest tomatoes you can. Any variety will work. Garden fresh or farmers markets are of course the best!
  • CHEESE: Caprese salad is made with fresh mozzarella (not the kind you put on pizza). Bocconcini or Fresh Mozzarella is found in the dairy area of most grocery stores.
  • FLAVORS: Once assembled, add torn fresh basil, salt & pepper and olive oil or dressing.

We like to layer slices of tomato with equal sized slices of mozzarella cheese and whole basil leaves for an individual caprese salad, just like you see in fancy Italian restaurants. Just drizzle some balsamic vinaigrette over the top and serve!

A quick addition of your favorite pasta will transform this recipe into a caprese pasta salad.   • 1 lb ripe tomatoes (any variety)
  • 1/2 cup fresh mozzarella (cocktail size)
  • 3 tablespoons fresh basil leaves
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper
  • balsamic vinegar (optional)
  1. Slice tomatoes (or cut them in half depending on size). Slice cheese into 1/4″ slices.
  2. Arrange tomatoes and cheese on a plate or platter.
  3. Drizzle with olive oil (and balsamic vinegar if using) and season with salt and pepper to taste.
  4. Sprinkle with fresh basil leaves and serve immediately.
