Waldorf Salad is a classic summer salad that combines celery, grapes, apples, walnuts, and raisins in a creamy base. Serve this crunchy side salad at a potluck or barbecue along some pulled pork sandwiches for the perfect meal.

This original Waldorf salad recipe was created in New York by the head chef of the Waldorf hotel in 1896. It was created for children at a charity ball in honor of St. Mary’s hospital!

We love bringing this dish with us when we head to a party but it also makes for a wonderfully fresh lunch every day of the year. It’s make ahead, simple, travelable, and goes perfectly with just about any spread. Serve on its own, on a bed of lettuce or with Oven Baked Chicken Breasts, this recipe fits right in to any menu!

Waldorf Salad Recipe

I love serving waldorf salad as a side dish, but you can easily create a main with it. The only addition you need is poached chicken or grilled chicken breasts, and you’ll have a beautiful chicken waldorf salad. I love serving this alongside some homemade dinner rolls in the summertime, it’s one of our favorites!

With Waldorf salad, it’s best to make it ahead of time. This allows the sweetness from the apples and grapes to infuse into the mayonnaise, creating a delicious sweet dressing for the salad. This makes it absolutely perfect for potlucks, it’s ready before you are!

What Is Waldorf Salad

This is a classic salad made from celery, grapes, apples, walnuts, and mayonnaise. It is most often served on a bed of lettuce.

Waldorf salad has the perfect balance of sweetness, nuttiness, crunch, and flavor. Everything just works together.

If you have any other ingredients on hand, feel free to test them out. We love making cranberry waldorf salad, but other great additions include a squeeze of lemon juice, chiffonade carrots, other berries, pecans or other nuts.

How To Make Waldorf Salad

Making an easy Waldorf salad is as simple as 1.2.3. To make this easy side dish:

  1. Prep the fruit and veggies
  2. Mix dressing ingredients
  3. Combine, chill and enjoy

For best results, don’t forget to cover and chill the waldorf salad for about an hour.

Waldorf Salad Dressing

There really isn’t much to Waldorf salad dressing, it’s pretty much just mayonnaise and a bit of sugar. Some add salt, pepper or a squeeze of lemon juice. I’ve also seen honey and yogurt used in the dressing.

I prefer to keep it traditional and simple but feel free to make it your own by adding your favorite flavors.

I find that anything barbecue goes perfectly with this fresh crunchy salad. Like coleslaw, the sweetness just pairs flawlessly. We love serving it alongside burgers, grilled chicken, or pulled pork.

  • 1/2 cup mayonnaise
  • 2 teaspoons sugar
  • 1/2 cup celery (diced)

Cheesy Hamburger Dip

I love a good juicy burger… and what better on a burger than a slice of cheddar cheese? If you’re looking for the best cheddar flavor, sharp is the way to go! A good melty cheddar cheese is obviously the best burger topping (along with pickles of course)!

As much as I love a juicy cheeseburger on a sesame seed bun, I think I love this scoopable Cheesy Hamburger Dip even more! It is loaded with the best burger flavors, pickle, bacon and of course heaps of Seriously Sharp Cheddar Cheese adds loads of bold cheddar flavor.

Cabot is celebrating their 100th anniversary as a co-op this year and what better way to celebrate than with this cheesy game day dip! Cabot Cheese is owned by 1,000 farm families throughout New England and New York and all proceeds are funnelled directly back to the farmers. ❤️

Cheesy Hamburger Dip can be made ahead for any potluck or party and everyone loves the flavors in this dip! I prep this this cheeseburger dip in the morning (or even the night before) and pop it in the oven when my guests arrive. By halftime, you will have a hot cheesy dip that is ready to be devoured. Serve it alongside cheddar sesame crackers (or tortilla chips)!

To make Cheddar Sesame Crackers: simply cut circles (or shapes) out of tortillas, brush with butter and sprinkle with a generous serving of Seriously Sharp Cheddar and bake until golden or crisp. This can be done 3 days ahead of time!

How To Make Hamburger Dip

There are few things better than a good cheese dip, including this juicy cheeseburger dip! The secret to a cream cheese based dip is using a hand mixer to combine the base. This adds air into the cream cheese making it creamy and easy to scoop! I’ve added in my favorite burger flavors in this recipe, if you have toppings you love, add them in… minced onion, yellow mustard, relish, steak spice are all great in this recipe!

To make this Cheesy Hamburger Dip:

  1. Brown ground beef
  2. Combine Cabot Cream Cheese and mix-ins
  3. Stir in Seriously Sharp Cheddar Cheese
  4. Top with more cheddar cheese and bacon
  5. Bake until hot and bubbly and cheese is melted

Chopped lettuce, pickles and diced tomatoes are great toppings for this hamburger dip. If you’re a fan of  Jalapeno Popper Dip, add a few diced jalapenos to the mix!

Can You Freeze Cream Cheese Dips

Yes, you sure can! If you happen to have any leftovers, this dip is perfect to freeze and save for a snack another day! It’s also great to make into stuffed mushrooms (just fill and bake) or even to spread on toast!

Cheesy Hamburger Dip

This hamburger dip features a creamy filling containing all of your favorite burger flavors. It is topped with even more cheese, then baked until hot and bubbly. 

  • 1 lb. lean ground beef
  • 1 onion (finely diced)
  • 2 cloves garlic (minced)
  • 8 oz. Cabot Cream Cheese (softened)
  • ½ cup sour cream
  • 2 tablespoons ketchup (or barbecue sauce)
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • 1 tablespoon Dijon mustard
  • 3 tablespoons dill pickle juice
  • 2 cups Cabot Seriously Sharp Cheddar Cheese (divided)
  • 8 slices bacon (fried crisp and chopped)
  1. Preheat oven to 375°F.
  2. Brown ground beef, onion and garlic over medium heat until no pink remains. Drain any fat.
  3. Combine cream cheese, sour cream, ketchup, Worcestershire sauce, smoke paprika, dill pickle juice and Dijon mustard with a hand mixer until fluffy.

  4. Fold 1 ½ cups Cabot Seriously Sharp Cheddar Cheese and half of the bacon.

  5. Spread into a 9” pie plate or casserole dish. Top with remaining cheese and bake 18-21 minutes or until melted and bubbly. Broil if desired.

Sesame Cheddar Crackers:

  • 6 – 10″ flour tortillas
  • 1/3 cup melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 cup Cabot Seriously Sharp Cheddar Cheese, shredded
  • 3 tablespoons sesame seeds
  1. Preheat oven to 350°F.
  2. Cut the tortilla into wedges (or use a cookie cutter to cut circles). 
  3. Combine melted butter and garlic powder. Toss with tortillas until evenly coated.
  4. Lay tortillas in a single layer (you’ll likely need 2 pans) and sprinkle with cheddar cheese and sesame seeds.
  5.  Bake 8-10 minutes or until golden.

Easy Chocolate Truffles are moist, rich, and uber delicious. They have a silky creamy middle with rich chocolate flavor. Just like rum balls or Oreo Truffles, these homemade chocolates couldn’t be easier to make! 

These can be made months in advance, freeze well and are the perfect addition to a holiday cookie tray, gift for your love on Valentine’s day or the most delicious after dinner treats!

What is a Chocolate Truffle

Chocolate truffles are actually named after the uncanny resemblance to truffle mushrooms. The mushrooms (truffles) are savory delicacies and are quite pricey and rare, and are often used in fine dining. Truffle chocolates are also exquisite, but super easy and fun to make (and inexpensive).

My daughter loves to help me make this chocolate truffle recipe – we can batch make them and freeze them. I love giving them as gifts (as a hostess gift in a pretty jar with a ribbon) or enjoying them as an easy sweet treat after dinner!

For the Love of Chocolate (Truffles)

I was recently in Kohler, a quaint and scenic city right next to the Sheboygan River in Wisconsin. I was fortunate enough to be hosted by Kohler and attend Kohler Food and Wine with some friends! This was truly one of the best experiences of my life (you may have seen some of it on my Instagram stories).  So much amazing food, celebrity chefs, the  most beautiful accommodation (we stayed at The American Club, a truly luxurious resort). From the spa to the meals, it was almost as decadent as these chocolate truffles!

My trip was pretty busy and so much fun! I made sure to take some time to tour the main shopping area (so many great little boutiques) where I enjoyed the best chocolates ever.  You may know Kohler for kitchen and bath fixtures (which of course is correct) but you guys, the chocolate.

Can we just stop for a moment and talk about the chocolate?

When I heard Kohler was known for chocolate, I knew we were in for a treat… I just didn’t know how decadent it would actually be. The chocolates I enjoyed were absolutely a work of art, so beautiful (seriously, look at these chocolates) but even more than that they were so so luxurious!

I’m so thankful for the experience I had in Kohler, it has definitely stolen my heart and I can’t wait to go back! Until then, I will be making batches of these truffles reminiscing about my experiences!

How To Make Truffles

To make these chocolate truffles:

  1. Beat together cream cheese, powdered sugar, cocoa powder until fluffy
  2. Microwave chocolate chips until almost melted and add to cream cheese mixture
  3. Refrigerate to cool and form into balls.
  4. Roll in cocoa powder (or toppings) and refrigerate to set.

When we make chocolate truffles, I like to roll them in a few ingredients so there’s a selection. I love using chocolate sprinkles, chopped walnuts or pecans, cocoa powder, and coconut. My favorite is the simplicity and flavor of cocoa powder. They also taste great dipped in a layer of melted chocolate and set (but I find it messier to dip).

We store these refrigerated or frozen but remove them and allow them to come to room temperature before serving.

Easy Chocolate Truffles

These easy chocolate truffles are moist, decadent, rich, and uber delicious. A silky creamy middle with rich chocolate flavor.

  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tablespoon cocoa powder
  • 2 cups chocolate chips (semi-sweet)
  • 1/2 teaspoon vanilla
  • cocoa powder (nuts or coconut for rolling)
  1. Mix cream cheese, cocoa powder, vanilla and powdered sugar on medium high until fluffy.
  2. Melt chocolate chips in the microwave at 50% power until almost melted (stirring every 30 seconds or so). Remove from microwave and continue stirring until smooth and melted.
  3. Stir melted chocolate into cream cheese mixture until smooth. Cover and refrigerate at least 2 hours.

  4. Shape truffles into 1″ balls and roll in nuts, cocoa powder, coconut or dip in melted chocolate.

Potato Leek Soup is the ultimate comfort food. Fragrant leeks are simmered with potatoes and chicken stock. Add in some cream and emulsify for a flavorful soup that you’ll want to enjoy all year long.

We love making creamy potato soups, they’re easy and comforting! I find that having a bisque-like smoothness to a soup makes it so elegant (yet easy), and using the natural ingredients to thicken it rather than cornstarch is always a win. Our favorites are pumpkin soup, butternut squash soup, and of course, this thick and creamy potato leek soup.

Potato Leek Soup

Potato leek soup is a classic soup that our family has made for generations. Leeks have a mild onion-like flavor, which is perfectly paired with the naturally sweet starches found in potatoes.

This inseparable combo is intensified with a delicious chicken stock (if you’re vegetarian, vegetable stock works well too). Add a splash of heavy cream to finish rounding off the flavors, and blend until smooth.

If this leek and potato soup is a little too thin for your liking, return it to the stovetop and simmer to reduce for another 5 minutes or so (or you could add a quick slurry of cornstarch and water).

Potatoes For Soup

Russet Potatoes are the best potatoes for soup due to their high starch content. I use them in other soup recipes like corn chowder and Easy Crock Pot Ham and Potato Soup. Russet potatoes break down easier than other potatoes (but= have a thicker skin so make sure to peel them).

Potato Soup Texture

The texture of potatoes can be described as slightly grainy/starchy, even when blended – think mashed potatoes. If you’d like to make this soup silky smooth, strain the soup through a cheesecloth. Straining is how I learned to make this soup in culinary school but truthfully, for a simple at home soup, I don’t feel it needs it, I enjoy the texture of the soup as it is blended.

How to Cut Leeks

When you prepare leeks for soup, you want to keep the white to light green section and discard the dark green areas. The dark green part of the leek is often tough and bitter. Leeks are easy to prepare but you’ll want to slice them in half to ensure you wash them well as they can often have a lot of dirt and grit in them.

  1. Chop off the green stems and the top of the leeks.
  2. Slice the leeks lengthwise.
  3. Wash each half (between the leaves) to remove dirt and debris.
  4. Slice the leeks as thinly as possible.
  5. Saute in butter.

The secret to a perfect leek soup is sauteing without browning (so use a low temp.).  This brings out the sweet flavor of the leeks.

Potato leek soup serves as the perfect simple base for any other delicious additions you might want to add. I love topping mine with fresh rosemary, thyme, croutons, or making a potato leek bacon soup with crumbled bacon. You can really get creative with this recipe!

Potato Leek Soup

Potato leek soup is the ultimate comfort food. Fragrant leeks are simmered with potatoes and chicken stock. Add in some cream and emulsify for a flavorful soup that you’ll want to enjoy all year long.

  • 3 large leeks (white only)
  • 1 stick butter
  • 2 lbs russet potatoes (about 5 medium)
  • 6 cups chicken stock (or vegetable)
  • 1 cup heavy cream
  • 3 sprigs fresh thyme (or 1/2 teaspoon dried)
  • salt and pepper to taste
  • chives or thyme for garnish
  1. Cut off the green of the leeks and discard (or freeze for stock). Cut the leeks lengthwise and wash well to remove any dirt or grit.
  2. Thinly slice the whites of the leeks, you should have about 5-6 cups.
  3. Place leeks and butter in a large pot. Cook over medium heat until leeks are tender without browning them, about 5-7 minutes.
  4. Add potatoes, stock and salt and pepper to taste. Simmer covered for 45 minutes or until potatoes are tender.
  5. Using a hand blender, blend soup until smooth. Return to pot, add cream and simmer 2-3 minutes. Season with salt and pepper if needed.

Optional: Once blended, run through a strainer lined with cheesecloth to achieve a smoother texture.

Chicken Piccata is one of my all time favorite dishes. Tender chicken breasts are dredged in a lemon pepper flour and seared until golden. Chicken Piccata (or any piccata such as veal piccata) is a dish that features meat pounded thin and topped with a buttery lemon caper sauce.

Similar to my Lemon Shrimp Linguine, this lemon chicken piccata is usually served over pasta and I prefer a thinner pasta such as angel hair or a light linguine as its a delicate dish. It also goes great with Oven Roasted Potatoes  and a side of baked zucchini or steamed broccoli!

How to Make Chicken Piccata

The meat is dredged in flour then added to a piccata sauce made from lemon and white wine that is packed full of  full of capers, butter, and other delicious ingredients.

This sauce is reduced to bring out the best flavors from the broth, white wine, garlic, butter, and capers. It creates a light but silky sauce with a flavor punch you won’t be able to resist!

How To Sear Chicken

To make this easy chicken piccata, begin by pounding the chicken breasts until they are even (so the fatter side cooks at the same rate as the thinner end).  I like to use a meat tenderizer, but the back of a sturdy cup or rolling pin also work in a pinch.  Feel free to cut them in half if your chicken breasts are large. Sear the chicken breasts on both sides to brown the outside. Because they are thin, they’ll only need a few minutes.

  • Cook butter and flour to make a roux.
  • Add broth, lemon juice, white wine and capers. Reduce for a few minutes.
  • Add chicken and parsley and heat through.

What to Serve With Chicken Piccata

Chicken Piccata is a great dish with a delicious buttery sauce so we serve it over any starchy carb (or of course Zucchini Noodles or Cauliflower Rice if you’re a low-carber). We love noodles, especially the pasta found in the refrigerator area of our grocery store (since it’s so easy and fast).

Alongside most pasta dishes like (Baked Spaghetti) we always add bread or buns to sop up any sauce and of course a fresh salad or Caesar Salad.

Chicken Piccata

Chicken piccata features chicken breasts simmered in a delicious caper and lemon white wine sauce.

  • 4 chicken breasts (pounded to about 1/2 inch thick (to ensure they cook evenly))
  • 1/2 cup flour
  • 1 lemon (zested)
  • 2 tablespoons olive oil (more as needed)
  • salt & pepper to taste

Sauce

  • 1/4 cup butter
  • 1 1/2 tablespoons flour
  • 1 cup chicken broth
  • 1/2 lemon (juiced (about 1 1/2 tablespoons))
  • 1/2 cup white wine (or chicken stock)
  • 3 tablespoons capers (drained)
  • 2 tablespoons fresh parsley (chopped)
  1. Combine the flour, lemon zest, salt and pepper. Dredge the chicken in flour mixture

  2. Heat olive oil over medium high heat and cook chicken about 4-5 minutes per side or until just until cooked through. Cook in batches if you cannot fit into pan.  Remove from pan and place in a dish to keep warm.

  3. In the same pan, melt 1/4 cup butter and add flour to create a roux. Whisk until smooth. Cook 1-2 minutes.

  4. Gradually stir in chicken broth whisking after each addition until smooth.

  5. Add lemon juice, white wine and capers. Simmer 3 minutes, whisking occasionally. 

  6. Add chicken back to pan and simmer 2-3 minutes. Stir in parsley and serve over pasta.

The Perfect Sauteed Mushrooms

Sauteed Mushrooms are one of my all time favorite veggies (along with Bacon Wrapped Asparagus), they add such a deliciously earthy rich flavor to dishes and are ready in just minutes. Fried Mushrooms with garlic are the perfect side dish or make a great topping for Pork Tenderloin or burgers!

How do you make fried mushrooms? Truthfully, fried mushrooms are easy to make but there are a few things you can do to take your sauteed mushrooms from ordinary to extraordinary.

How to Make Sauteed Mushrooms

The key to a deep rich flavor and making the best sauteed mushrooms is to allow them to caramelize and add aromatics (garlic/thyme) and salt (soy sauce). I add lots of garlic but you can also add fry onions for the perfect sauteed mushrooms and onions burger topping!

You can use any kind of fresh mushrooms in this recipe, sauteed portobellos are a delicious meaty option as well!

How to Caramelize Mushrooms:

There are a few secrets to getting mushrooms to caramelize perfectly! Start by wiping mushrooms with a damp paper towel.  Quickly rinsing mushrooms under water  is ok, but if you leave them too long it can cause their spongy texture to soak up the water which, as you’d imagine, can result in soggy sauteed mushrooms.  Instead, give them a quick rinse and dab them dry or wipe them with a damp paper towel or a mushroom brush!

  1. Use Butter and Olive Oil:  The combination of the two adds great flavor and definitely makes a difference to oil alone.
  2. Do Not Crowd the Pan: If you crowd the pan your mushrooms will simmer in their own juices rather than caramelize.
  3. Do Not Stir Too Much: The key to caramelized mushrooms is allowing the mushrooms to form a crust which means you need to let them sit on one side without stirring.
  4. Turn Up the Heat: Add additional flavors such as wine or Worcestershire sauce in small quantities while the pan is very hot.

While I love using fried mushrooms to top a steak or burger, they also add amazing flavor to any mushroom recipe!  They’re perfect to cook and add to casseroles, soups and stews.  The extra flavor and caramelization will add tons of depth to your dishes with very little extra effort.

Can You Freeze Sauteed Mushrooms?

Yes you can, fried or sauteed mushrooms freeze well (although the texture can change slightly) and are great to add to Pasta Sauce, omelettes and chicken or beef stews.

  • Cook and cool as directed.
  • Lay them out on a baking sheet and freeze flat.
  • Once frozen, transfer to a freezer bag or container.

Sauteed Mushrooms with Garlic

Sauteed Mushrooms are an amazing side dish or make a great topping for steaks or burgers! The key to the deep rich flavor is to allow the mushrooms to caramelize.

  • 1 lb white or brown mushrooms (or cremini or portobello)
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/4 cup white wine (optional)
  • 1 sprig fresh thyme (or a pinch of dried thyme)
  • 2 cloves garlic (minced)
  • chives for garnish (optional)
  1. Clean mushrooms by gently wiping with a paper towel or using a mushroom brush. Slice into thick slices (about 1/2″).

  2. Add butter and oil to a pan and heat over medium high heat.
  3. Quickly toss the mushrooms & soy sauce (do not do this ahead of time, this will remove too much moisture from the mushrooms)
  4. Add the mushrooms to the pan and toss with olive oil mixture. Do not stir allow to cook about 4-5 minutes without disturbing to brown on one side.

  5. Add white wine if using and allow to evaporate. Add garlic and thyme (if using). Continue cooking an additional 3-4 minutes stirring occasionally until cooked.

  6. Season with salt & pepper to taste.

This is an easy beef stew recipe, and it’s made even easier by pressure cooking in the Instant Pot! We make homemade beef stew often but if you don’t have time to simmer it to perfection, not to worry. Just pull out your Instant Pot, and you’ll have that stick-to-your ribs dinner on the table in no time flat! 

How To Make Instant Pot Stew

To make this instant pot beef stew recipe:

  1. Chop up the veggies.
  2. Turn the Instant Pot on to sauté and brown the stew beef chunks on all sides.
  3. Add the rest of the beef stew ingredients and turn the pressure cooker on.
  4. When cooking cycle ends, depressurize your Instant Pot and add the cornstarch slurry to thicken.

Instant Pot Beef Stew Ingredients

  • Choose the Right Meat:
    • When it comes to pressure cooker beef stew, there is no better cut of meat than chuck. Buy a thick chuck pot roast and cut it into chunks. If you can’t find chuck, regular stewing beef will work just fine!
  • Sear the Meat: 
    • Start this easy Instant Pot Beef Stew recipe off right by searing the meat in batches. If you crowd the pan, you’ll get too much juice and the meat won’t brown properly. The bottom of your pan should have a nice glaze on it which adds a delicious richness to the broth.
  • Deglaze the Instant Pot: 
    • Deglaze once the beef has a nice crust on it! Simply add broth/wine and scrape any goodies off the bottom of the pan.
  • Add the Vegetables: 
    • Stay away from delicate veggies. Any veggie you’d use to make roasted root vegetables would also be great in the pressure cooker (like potatoes and carrots) as they don’t fall apart.

How Long to Cook Beef Stew in the Instant Pot

This pressure cooker beef stew recipe starts with searing the beef to get a good crust on it (don’t skip this part). This will take about 10-15 minutes or so (in 2 batches).

The stew cooks for 35 minutes in the Instant Pot but keep in mind, that’s the cooking time only. It will take about 10-15 minutes to get up to pressure and it will natural release for about 15 minutes.

Overall, you can expect this Instant Pot Beef Stew to take about 90 minutes start to finish, but don’t worry, most of the time is hands off.

What to Serve with Instant Pot Stew

Beef stew is practically a complete meat-and-potatoes meal in itself, no need to fuss with side dishes.

Serve it with dinner rolls, biscuits or corn bread slathered with butter. I also love adding a side caesar salad for a nice light crunch alongside the hearty stew.

Can You Freeze Beef Stew?

Yes you sure can! This beef stew recipe is so yummy, you might not have any leftovers. If you do, you’ll be happy to know it freezes easily. 

To serve a quick beef stew dinner, no need to pre-thaw. Just empty the frozen block into a pot on low heat, and you’ll have dinner on the table again in no time!

Instant Pot Beef Stew

This instant pot beef stew is unbelievably mouthwatering. Tender beef chunks are pressure cooked with other delicious ingredients like peas, potatoes, carrots, and onions.

  • 2 pounds stewing beef (trimmed and cubed)
  • ½ teaspoon each garlic powder (salt and pepper)
  • 1 large onion (diced)
  • 3 tablespoons olive oil
  • 1/4 cup tomato paste
  • 3 cups beef broth
  • 1 cup red wine (or 1 more cup beef broth)
  • 1 teaspoon fresh rosemary (chopped)
  • 2 sprigs thyme
  • 4 large carrots (chopped)
  • 3 cups baby potatoes (cubed)
  • 2 stalks celery (chopped, about 1 cup)
  • 3/4 cup peas (defrosted)
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  1. Toss beef with garlic powder, salt and pepper.
  2. Turn a 6-quart Instant Pot to sauté and add half of the olive olive oil. Brown half of the beef, about 3-5 minutes, don’t stir too much so you get a nice crust. Repeat with remaining beef.
  3. Add broth, tomato paste, rosemary, wine and vegetables (ensure ingredients do not go above fill line). Secure lid and select Meat/Stew; cook on high pressure 35 minutes.

  4. Once the timer beeps, allow for a natural-release for about 15 minutes. Release any remaining pressure.

  5. Remove lid and turn to sauté bringing broth to a boil.

  6. Create a slurry by combining cornstarch and water in a small bowl or cup.
  7. Once the broth is simmering, stir in the cornstarch to reach desired consistency (you may not need all of it). Allow to simmer 2-3 minutes or until thickened and bubbly. 

  8. Stir in peas and serve.

Note: You may not need all of the cornstarch slurry.

Loaded Potato Skins

Potato skins are delicious and easy to make.  We use russet potatoes as the skins hold up well (but save the skins from baked sweet potatoes, because you can eat sweet potato skins and they’re amazing in this recipe too)!

Most restaurant style potato skins are deep fried and then the toppings are added and they’re broiled. While I love them, I don’t love how greasy they can be (and homemade potato skins are so much better).

This recipe bakes the potato skins until crisp and then adds toppings and they bake a few minutes more until the cheese is melted.

How to Make Potato Skins

Potato skins are simple to make and they taste amazing! They’re easy to crisp up in the oven and can be prepped ahead of time if you’re having guests.

Potatoes

  • Choose smaller potatoes to make bite sized snacks.
  • Use russet potatoes and bake potatoes in the oven until tender.
  • Cool completely before cutting. Save the inside for Baked Potato Soup or use to make Mashed Potatoes.
  • Cut lengthwise and use a spoon to scoop out the flesh. I usually leave about 1/4″ of potato in the shell. You need enough to allow the potato to hold up.

Toppings for Baked Potato Skins

Fill the skins with your favorite toppings and bake. Add cheese and bacon or turn these into a meal with heartier toppings. The possibilities are endless:

  • Bacon, cheddar and chive/onions dipped in sour cream for the classic potato skin recipe
  • Ground beef seasoned with Taco Seasoning, cheese and cilantro
  • Leftover Crock Pot Pulled Pork (with Mac and Cheese in the bottom of if you have some)
  • Create Jalapeno Popper Potato Skins for a spicy twist on the usual

Can Potato Skins Be Made Ahead of Time

Yes they sure can! If I am making a recipe that needs cooked potatoes (like Loaded Mashed Potato Cakes or Twice Baked Potato Casserole) I simply bake the potatoes and scoop out the flesh.

Freeze the empty shells on a baking pan and then once frozen, stack them in a freezer bag. They’ll keep for several months in the freezer. Bake these easy potato skins starting right from frozen, no need to defrost first!

Crispy Oven Baked Potato Skins

Crispy garlic buttered potato skins filled with cheese and bacon are the perfect appetizer!

  • 5 baked potatoes (small)
  • 2 tablespoons unsalted butter (melted)
  • 1/2 teaspoon parsley
  • 1/4 teaspoon seasoned salt
  • 1/4 teaspoon garlic powder
  • 3 slices cooked bacon (finely chopped or 3 tablespoons bacon bits)

  4. Flip potatoes over and bake an additional 5 minutes or until slightly browned and crisp.

  5. Fill each potato with cheese and bacon. Return to the oven for another 5-7 minutes or until cheese is melted and bubbly.

  6. Remove from the oven, top with chives and serve with sour cream.

The Best Chili Recipe is one that is loaded with beef and beans and absolutely full of flavor… just like this one! Chili is hands down one of my husband’s favorite meals (and I love it because it’s easy to make)!

This easy chili recipe cooks on the stovetop and is perfect served alongside Homemade Cornbread, buttered toast or Buttermilk Biscuits. Add in your favorite toppings like cheese and onions for the perfect meal.

How to Make Chili

While I sometimes make crockpot chili, this easy version is great for a weeknight meal! Making chili is really easy! In this recipe I add bell pepper but you can skip it or add your own favorite veggies (peppers, mushrooms, zucchini are all great choices).

Seasonings:

  • The seasonings in this recipe are chili powder and cumin. I always make my own homemade chili powder but of course store bought works great too.
  • What is in Chili Powder?  Sweet paprika, garlic powder, cayenne pepper, onion powder, oregano and cumin. This is the perfect blend of spices (find my favorite chili powder recipe here).
  • Mix Chili Powder into the raw ground beef before cooking to ensure every morsel is seasoned to perfection.

Beans:

  • I use canned red kidney beans but pinto beans or black beans work as well.
  • Rinse beans (unless using chili beans) before adding to remove excess salt and starches.

How to Thicken Chili

When making chili on the stove, I simmer it uncovered which allows the chili to naturally thicken without having to add cornstarch or flour.

While thickening chili by simmering is the best option, you may not always have time to let it reduce. If you don’t have time to simmer it to thicken you can sprinkle in a little bit of cornmeal or make a cornstarch or flour slurry and add it in.

If you can spare a few extra minutes, just let it simmer uncovered.

What to Serve with Chili

My #1 favorite of course is cornbread or just plain ol’ toast with butter. Pretty much any bread to sop up whatever is left in the bottom of my bowl! 30 Minute Dinner Rolls are great with chili too!

I always put out a collection of toppings…  and while everyone has a different idea as to what goes with chili I have a few staples:

  • sour cream
  • red or green onion
  • cheddar cheese or monterey jack
  • jalapenos
  • cilantro, avocado & lime wedges
  • croutons or tortilla chips

Can You Freeze Chili?

100% yes!!! Chili freezes and reheats beautifully. We freeze it in single sized portions for lunches or in freezer bags for a quick and easy weeknight meal.

Defrost in the fridge overnight and heat in a saucepan (or the microwave) to serve.

This is the best chili recipe! A big pot of ground beef chili loaded with beef and beans is the perfect game day food! 

  • 2 lbs lean ground beef
  • 1 onion (diced)
  • 1 jalapeno (seeded and finely diced)
  • 4 cloves garlic (minced)
  • 2 1/2 tablespoons chili powder (divided (or to taste))
  • 1 teaspoon cumin
  • 1 green bell pepper (seeded and diced)
  • 14.5 oz crushed tomatoes (canned)
  • 19 oz kidney beans (canned, drained & rinsed)
  • 14.5 oz diced tomatoes (with juice)
  • 1 1/2 cups beef broth
  • 1 cup beer
  • 1 tablespoon tomato paste
  • 1 tablespoon brown sugar (optional)
  • salt and pepper (to taste)
  1.  Combine ground beef and 1 1/2 tablespoons chili powder.

  2. In a large pot, brown ground beef, onion, jalapeno, and garlic in a large pot. Drainy any fat.

  3. Add in remaining ingredients and bring to a boil. Reduce heat and simmer uncovered 45-60 minutes or until chili has reached desired thickness.

  4. Top with cheddar cheese, green onions, cilantro or other favorite toppings.

Serving size: 1 1/2 cups

Roasting Beets in the Oven

If you’ve ever tried cooking beets, then you know they come home from the store like hard little rocks (and make everything in sight turn pink). Instead of struggling with peeling and slicing to get them into the pot, go easy on yourself and make oven roasted beets. No peeling, no slicing and all of the flavor!

How to Prepare Beets

Oven roasted beets are not only delicious, but so easy to work with.  You’ll wonder why you ever tried to wrestle with them raw! 

  • Scrub beets to remove any dirt/debris.
  • Trim off the tops and bottoms.
  • If your beets are large, cut them in half.

Lots of cooks like to use gloves when working with beets! The color is sooo pretty (another reason to love beets!) but it’s really intense, and has a tendency to stain your skin and fingernails (and white cutting boards). Wear an apron too!

How To Roast Beets

Roasted beets are insanely easy. Once they’re washed and prepped, here’s all you have to do:

  • Line a baking pan or piece of foil with parchment paper. Add beets.
  • Sprinkle with olive oil, salt and pepper. Seal the foil.
  • Roast for about an hour.

Super easy peasy right? The best part to this easy side dish is that the skins will just wipe right off! Aren’t you glad you didn’t bother peeling them?

You’ll  know your oven roast beets are done when you poke a fork or a skewer thought them and it goes though easily.  This is the best part: Once they are cool enough to touch after removing from the oven, you can rub the skins off really easily using a paper towel. Voila, perfect beets and no peeling!

You can now easily slice, dice or grate your oven-baked beets. Perfect for a roasted beet salad (with goat cheese and walnuts).  Baked beets have so much flavor that they can also stand on their own as a side dish for meals like salisbury steak. Just season them with a simple dash of salt and drizzle of balsamic vinegar. Add roasted beets and carrots to your plate to make it pop with color and nutrition. This is  vibrant side dish, packed with flavor and pizazz. You can roast the carrots in the oven with the beets, but wrap them up separately (they won’t take as long to cook).

Can You Freeze Roasted Beets?

Heck Yeah! You can store oven roasted beets in the refrigerator for up to a week but they also freeze well. Just slice or dice, and pack in freezer bags. They’ll keep for several months that way.

Simple Roasted Beets

These roasted beets are the perfect way to enjoy all of the earthy sweetness of this root vegetable without losing the perfect texture from boiling them.

  • 6 fresh beets (or as many as desired)
  • 1 tablespoon olive oil (about 1 tablespoon for every 4-6 beets)
  • salt and pepper (to taste)
  1. Preheat oven to 375°F.
