Easter Bunny Sugar Cookies

Kiddos will love these adorable and simple Easter bunny cookies!

These start with a pre-made sugar cookie dough but if you have a favorite recipe, feel free to use that!  This recipe does call for egg whites in the frosting…  but the frosting is glossy and shiny.  Keep in mind if you purchase egg whites in a box (in the refrigerator section of the store) they are usually pasteurized and work great in this recipe.

Easter Bunny Sugar Cookies

Kiddos will love these adorable and simple Easter bunny cookies!

Ingredients:

  • 1 roll prepared Sugar Cookie Dough (store bought or homemade)
  • 3 Egg Whites
  • 1 tsp Vanilla
  • 4 cup Powdered Sugar
  • Pink Starburst Candies
  • Mini Chocolate chips
  • White Sparkling Sugar

Directions:

  1. Preheat oven to 350 and line baking sheet with parchment paper.
  2. Roll out dough to about 1/8″ thick. Cut egg shaped cookies and bake 10-12 minutes or just until edges lightly brown. Cool completely on a wire rack.
  3. Combine the egg whites and vanilla and beat until bubbly. Add powdered sugar gradually and mix until all sugar is incorporated. Beat on high until mixture forms stiff, glossy peaks. Transfer icing to pastry bag or Ziploc bag.
  4. Knead and flatten each Starburst out into a rectangle and cut each into 4 equal strips. Cut each strip in half to make the pink inner ears.
  5. Snip the corner off the ziploc bag if using. Pipe a white oval around each cookie and fill it in with icing. (The icing will spread a bit to fill it).
  6. Place 2 mini chocolate chips pointy side down near bottom edge of oval and add ears.
  7. Allow cookie to set for at least 5 minutes before piping a bunny tail at opposite end of cookie (or you can use a mini marshmallow). Sprinkle bunny tail with sparkling sugar to make it stand out more.
  8. Allow to set for several hours at room temperature before serving.
