This is yet another amazing recipe created by my Mom!  I’ve mentioned before and I KNOW I will mention it again, my Mom is literally the most amazing cook!  She has taught me so many things.  I’m always calling her for tips and how to’s and “how do I fix my (insert dish here)”.  She always has the answer!

These just take a few quick minutes to prepare so they are perfect for a busy weeknight and just taste so delicious and light.  Baja Fish Tacos are naturally light in calories but don’t worry, they are very big in flavor!

Baja Fish Tacos with Onion Slaw

Baja Fish Tacos with Onion Slaw

Ingredients

    Onion Slaw
  • 1/4 cup sour cream (I use light)
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 jalapeño pepper seeded & chopped
  • 1 cup thinly sliced white onion
    • Baja Rub
  • 1 1/2 teaspoons each paprika & brown sugar
  • 1 teaspoon oregano
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt pepper ground cumin
    • Tacos
  • 4-6 tilapia filets
  • 1tablespoon canola oil
  • 8 ( 6 inch) corn tortillas
  • 1 sliced avocado
  • 1 lime ( wedged)

Instructions

    Onion Slaw
  1. Combine sour cream, lime juice, cilantro and jalapeño in food processor or blender until smooth
  2. Toss with onions
  3. Note: To reduce strength of onions, they can be sliced and soaked in cold water for up 2 hrs first
    4. Baja Tilapia Filets
  4. Combine rub ingredients and sprinkle on fish
  5. Heat oil to medium high heat add fish to pan
  6. Cook 3 minutes per side or till done
    7. Tacos
  7. Warm tortillas according to package
  8. Divide fish, onion mix and avocado on tortillas
  9. Serve with lime wedges

Notes

If you are not an onion fan, just skip the slaw or replace the onions with a bag of prepackaged slaw.
