This is an awesome dish that my friend Dorthea always brings over… no matter what the occasion is, it’s gone every single time!  The great thing is that it’s super simple to prepare.

If you prefer, you can use fat free and sugar free products when making this!  The last time she made it, she used fat free greek yogurt and fat free cream cheese and it was just delicious… nobody could tell the difference!

Ingredients

  • 1 cup cream cheese (regular or light)
  • 1 cup greek yogurt (regular or light)
  • caramel ice cream topping
  • Skor bits or other english toffee bits like Heath
  • Apples, your favorite variety
  • Lemon juice

Instructions

  1. Mix cream cheese and greek yogurt until completely combined. Spread into the bottom of a shallow dish or plate (I use a platter).
  2. Drizzle with ice cream topping and sprinkle with Skor bits.
  3. Slice apples and toss with a touch of lemon juice to prevent browning.
  4. Serve the dip with apple slices.

Here’s an easy yummy treat for dessert!  S’mores dip is a great twist on an old summer favorite!

My kiddos also love to dip fruit (strawberries, bananas and apples) in this dip and so do I!!

Instructions

  1. Mix condensed milk and chocolate chips in a small bowl. Microwave for 30 seconds. Stir and return it to the microwave checking every 15 seconds until just about melted. (Mine only took 40 seconds total but microwaves can vary).
  2. Add bits of the Marshmallow Fluff on top of the chocolate and microwave an additional 15 seconds or until it is soft. Using a butter knife gently swirl the fluff and the chocolate together to get a marbled effect. Top with desired garnish and serve warm with graham crackers.

This is a delicious summer dessert that is simple to prepare and looks pretty for any gathering!  Fresh berries mixed with a rich creamy white chocolate layer makes a perfect summer dessert!

These can be prepared up to 2 days in advance and stored in the fridge.  Because they contain fresh whipped cream, be sure to keep them cold!

White Chocolate Berry Parfaits

Yield: 10 parfaits

White Chocolate Berry Parfaits

Ingredients

    Cream Layer
  • 1 cup of whipping cream
  • 2 oz white chocolate
  • 1 package white chocolate pudding
  • 2 cups milk
  • Berries
  • 1 pint strawberries, sliced
  • 1/2 cup sugar
  • blue berries
  • Cake
  • 1 store bought angel food cake, cut into small squares
  • OR
  • 1 angel food cake prepared according to package directions, cooled and cut
  • Strawberry Sauce (optional)
  • cornstarch

Instructions

  1. Mix sliced strawberries & sugar. Let sit at room temperature at least 1 hour to release juices. Wash blueberries & set aside.
  2. Cream Layer
  3. In a small saucepan, heat whipping cream and chocolate on low heat until chocolate is melted. Refrigerate until VERY cold. Once whipping cream is very cold, beat on high until peaks form.
  4. Mix pudding with milk according to package directions. Gently fold whipped cream into pudding mixture.
  5. Parfait Assembly
  6. Drain strawberries reserving juice for sauce if desired. In each jar, layer strawberries, cream mixture, cake, strawberries, blueberries, cream mixture & blueberries.
  7. Refrigerate 2 hours before serving or overnight.

Notes

To make Strawberry Sauce: Mix together reserved cold strawberry juice with cornstarch (approx. 1 teaspoon of cornstarch per 1/2 cup of juice). Bring to a boil over medium heat stirring constantly and let boil for 1 minute. Remove from heat and cool completely.

Homemade Marshmallow Fluff Recipe

My sister and I made this the other day and it is SO delicious!  While it does take a little time, it’s very simple to make and tastes so much better than the store bought marshmallow fluff!

This recipe uses vanilla for flavoring, but I can’t wait to make it again and play with the flavorings by adding different extracts… next on my list to try is almond!

While there is corn syrup in this recipe… it is NOT the same product as that High Fructose Corn Syrup which most of us are trying to avoid.  Enjoy!

Homemade Marshmallow Fluff

Ingredients

Instructions

  1. With a wisk attachment, beat the egg whites and cream of tartar until foamy.
  2. Add 2 tablespoons of sugar and beat until soft peaks form, set aside.
  3. Meanwhile, in a saucepan, add 1/3 cup water, corn syrup, and 2/3 cup sugar.
  4. Cook over medium heat while stirring until the mixture reaches firm ball stage (instructions below) or 248 degrees on a candy thermometer. This step will take about 15 minutes.
  5. To test for firm ball stage:
  6. Fill a glass with cold water and drop a small spoonful of the mixture into the cold water. Remove the mixture from the cold water and it should hold its shape, but quickly flatten.
  7. Once the corn syrup mixture has reached firm ball stage, turn the mixer onto medium and in a slow steady stream, pour the corn syrup mixture into the beaten egg whites.
  8. Once all of the corn syrup mixture has been added, beat on high for 5 minutes.
  9. Add vanilla extract and beat on high 1 minute
  10. Store in a tightly sealed container

  • 2 Tablespoons Unsweetened Cocoa Powder
  • 2 cups Whipping Cream

Directions:

  1. Combine cocoa powder and pudding powder in a bowl
  2. Add Whipping Cream and mix with an electric mixer on medium high for 1 minute
  3. Pour into serving dishes immediately and serve or refrigerate
  4. Garnish your mousse with fresh berries, mint or whipped cream!
