Here are some super easy Valentines Day Treats!  I love these and they are just SO quick to make and so cute that I just had to share them with you!  It took me about 10 minutes to make a whole batch of these!  I know you can make your own fortune cookies fairly easily… but not as easy as buying them at the grocery store!  :)

If you head to the Asian food aisle, you will find boxes of fortune cookies.  I got 25 for approx. $3.50 so they are not expensive and make just such an adorable treat!

Sprinkle Fortune Cookies

Ingredients:

  • 1 Box of Fortune Cookies (25pcs)
  • 1 Package of White Melts
  • 1 cup of chocolate chips
  • Sprinkles

Directions:

  1. Place white chocolate melts in a small bowl and microwave on 50% power
  2. Check and stir every 30 seconds until melted.
  3. Dip the fortune cookie into the chocolate
  4. Sprinkle the sprinkles over the melted chocolate (I tried dipping, it didn’t look as nice)
  5. Allow to cool on parchment paper
  6. Repeat with chocolate chips
  7. Package in treat bags or place on a plate and serve

For the packaging, I found little treat bags at Michaels (and used my 40% off coupon of course!)!  For the topper I cut pink paper 4″x4″ and folded it in half.  I stapled it over the end of the bag and glued on foam hearts I found at the dollar store!

These don’t have to be ONLY for Valentine’s Day, you could easily change up the color of the sprinkles to change the occasion… blue and pink for a baby shower, red and green for Christmas or rainbow sprinkles for a birthday treat!!

Be sure to add any extra tips you have in the comments below!

Here are some great tips to keep in mind next time you are baking cupcakes:

  • Do not over mix your batter, this will make your cupcakes dense & chewy
  • Bring ingredients to room temperature (including your eggs) to avoid lumpy batter
  • To fill your wells, put your batter in a Ziploc bag and snip off the corner.  This will eliminate dripping batter!
  • To ensure even baking, bake only 1 tray at a time and ensure each well has the same amount of batter
  • The best way to test for doneness is to touch the top.  If it springs back (and doesn’t leave a fingerprint), it’s ready
  • Most cakes can be made into cupcakes:
    • keep the oven temperature the same as what the recipe calls for (usually 350)
    • cut the baking time by 1/2 to 2/3
  • Fill cupcake papers 1/2 to 2/3 full with batter
  • Baking time guidelines
    • Mini Cupcakes:  8-10 minutes
    • Standard Cupcakes:  18-24 minutes
    • Jumbo Cupcakes:  24-26 minutes

Birthday Request

Ok, I know I posted earlier about the “Birthday Kindness Experiment” because my youngest will be 9 this weekend.

Well, I got a very special request for this weekend… it included… breakfast in bed at 8:00am SHARP (love that part).

Because all my other kiddos are grown, I truly cherish these moments… and notes 😉  Had to share!  Love it!

There are no words for how tasty this dish is… and JUST SO EASY!

It will take you literally 5 minutes to toss into the slow cooker and you can use whatever you have on hand!!  All ingredients in this dish are optional, it’s a super way to use up whatever is in your fridge!

In today’s version, I used leftover chopped turkey from the freezer, chopped zucchini & red peppers and cream of mushroom soup.  My kids chowed down on this!  I rounded it out with a green salad and some crusty bread for a perfect meal!  You can easily use chicken, ground beef or even ham in this recipe!  The zucchini wasn’t even noticeable (to my kids)… yay, sneaky veggies!!  However, feel free to toss in whatever veggies your kids like or you have on hand..  frozen peas and carrots or broccoli would be great choices for this recipe!

Slow cookers are so amazing for those busy days but this recipe tops them all!  First it tastes awesome, second you can use what you have on hand and third it cooks in the slow cooker!!  What’s not to love!

I’ve love to hear what your version of Tater Tot Casserole is!

Tater Tot Casserole Slow Cooker Recipe
Ingredients
  • 1 bag of Tater Tots
  • 2 cups of cooked chicken, turkey, ham, ground beef (whatever you have on hand)
  • 2 cups of vegetables (fresh or frozen)
  • 1 can of cream of "something" soup (mushroom, chicken, celery)
  • 1 cup of milk
  • 2 cups of shredded cheddar cheese (or whatever type you like best)
  • ¾ cup of mayo (I used light)
  • 1 teaspoon each onion powder and dry mustard
Instructions
Sauce
  1. In a bowl mix together soup, milk, cheese, mayo, onion powder and dry mustard.
  2. Set aside
Casserole
  1. Pour ½ of the Tater Tots into your slow cooker
  2. Top with meat and vegetables
  3. Place the remainder of the Tater Tots on top
  4. Pour sauce mix over Tater Tots
  5. Cook on high 3-4 hours or on low 7 hours
